My guest is Kiki Nelson, but you may know her best as @PlantifulKiki. Her book, Plantifully Lean is turning heads, but what turned my attention to Kiki was her transparent health and weight loss journey.
As a young adult, Kiki struggled with her weight and suffered all of the ill consequences as a result - high blood pressure, pre-diabetes, hormonal imbalances, lack of energy - and none of this was optimal for a young Mom of two active children.
Two things really moved the needle for Kiki - and they are the cornerstone of the work she does today. She found simple whole food, plant-based nutrition and she did (and still does) a lot of work around self-compassion, forgiveness, and self-love.
The results? In a little over a year, she lost 70 pounds and reversed those lifestyle diseases.
Today, you can find her on her social media channels dishing up plenty of recipes and inspiration, and you can find her book Plantifully Lean on bookshelves now.

Ya know what I love about KiKi? She's real. No fake stuff. When she films a video she films it all. Spills, the dog, the kids, her mistakes, etc...everything! I love that. The reason she is so popular is because she is so real. I always wait for her videos of the Homestead. She is just a Rock Star in my book.

I have been following Kiki since she started on KZbin. She was one of the first people I found that was straightforward, made it sound easy. And her recipes were so much more doable than a lot of the recipes that you see when you're beginning a plant-based diet. I was so relieved to find her after 2 years of being plant-based, but feeling like all the recipes were overwhelming. Thank you Kiki for being brave enough to share your journey!

Kiki is real and humble and obviously grateful to be able share her journey to the power of WFPB way of eating. I’m buying her book. I hope she has some Mexican influenced WFPB recipes. If not then the next book! I think maybe another reason she’s more content is every day she gets to Forest Bath in her mountain home. Keep up the great work Kiki. Thanks Rip for inviting Kiki and the great questions and highlighting some of her recipes.

I'm a mountains person. I have friends who MUST have the ocean, but not me. I lived in Los Angeles for over 2 decades, and rarely went to the beach. "The mountains are calling...and I must go..." It's real. I don't live in magical Taos, NM but Grandma Taos Mountain CALLS people to her. She's a living being, and famous Taos lover, Dennis Hopper, talked about it.

It's not about that. It's just showing how calorie dense it is. A pound of non starchy vegetables is only about 100 calories. Vs a pound of oil at 4,000. 1 tablespoon of oil is 120 calories. So you can have a nice salad for just a couple hundred calories but put a little oil on it and you just doubled or even tripled the calories of the meal. There's a lecture by a guy named Jeff Novick about calorie density. He explains it really well. Kiki actually mentioned in it this interview

@mattzilla331

@Laura Stephenson the point is a little bit of high fat food is a lot of calories. While a lot of a low calorie food is still only a little calories. Don't get hung up on the unit of measurement being a pound. They are not saying eat a pound of this or a pound of that. It's just to compare the calorie density of foods.
