Thank you for sharing!! 🤗 My mam is from El Salvador. We have something called "curtido" which is a pickled thin cabbage with red onion, oregano, carrots, vinegar and sometimes jalapeños. I say it's kimchi's latin cousin 💕😁

I love kimchi but I always have bought it in a lovely Korean store here in Quito Ecuador, I would love to try this recipe. ... and yes I am an ARMY too, thanks to BTS I have got to know so much about Korean culture and try these new delicious recipes.

When you leave the vegetable in salt water, do u leave it out at room temperature or refrigerate them?

The recipe I've using from one site I found years ago didn't have flour in the ingredients so it was basically gluten free. I never knew kimchi has flour in it. Gotta be careful and ask first if I am ever served kimchi in the future (so far I have only had my homemade version).

It’s traditional to use sweet rice flour, which is gluten free. This recipe using wheat flour is not typical.

Maybe you can ask the Korean grocery store management to special order them for you. If you’re having a problem finding them other people probably are as well.

What keto substitute for the flour?...can the flour part be skipped?

@@thatismam isn't it mostly the salt?...sauerkraut doesn't require flour mixture...I believe it is just salt and cabbage.

A lot of recipes use a type of rice flour too. Either way there is a starch! You might have to look for a keto-specific recipe, rather than aiming to adapt this one.

The carbohydrates are metabolized during the fermentation process, so there will not be a significant amount of carbs from the flour.

How long do you let kimchi ferment before it is ready to eat?

you can eat it immediately! once my mom puts her kimchi in the fridge, she typically waits 1-2 weeks before she uses it for recipes (dumplings, kimchi stew, etc).

5:22 Haha, I really wish my Kimchi would last me that long. But it's just too tasty, so it's eaten quickly. 😅 Need to check out that Korean Radish ... only used the Daikon one so far.
