@@thatismam isn't it mostly the salt?...sauerkraut doesn't require flour mixture...I believe it is just salt and cabbage.

A lot of recipes use a type of rice flour too. Either way there is a starch! You might have to look for a keto-specific recipe, rather than aiming to adapt this one.

The carbohydrates are metabolized during the fermentation process, so there will not be a significant amount of carbs from the flour.

you can eat it immediately! once my mom puts her kimchi in the fridge, she typically waits 1-2 weeks before she uses it for recipes (dumplings, kimchi stew, etc).

The recipe I've using from one site I found years ago didn't have flour in the ingredients so it was basically gluten free. I never knew kimchi has flour in it. Gotta be careful and ask first if I am ever served kimchi in the future (so far I have only had my homemade version).

It’s traditional to use sweet rice flour, which is gluten free. This recipe using wheat flour is not typical.
