My family and I made ricotta and herb ravioli with our kids last month, but the kids stacked some ravioli on top of each other and they stuck together. Yes, the semolina or flour is important. I wish we had seen your gorgeous video before we'd made our fun ravioli. We had uneven thickness, but they were delicious all the same. Thank you, Kylie! Beautiful as usual and I love the updates from Tuscany. I just thought of a short-cut for "fast-food" ravioli. Make the ricotta filling and the butter/herb sauce. Bake the ricotta filling, covered tightly with foil. Meanwhile cook some wide -cut egg noodles to substitute for the scratch-made pasta. Put together on a plate. Not the same as your recipe but similar flavors. I know I will never make this from scratch. God bless you and your family.
