Just made the white bean recipe. It's really good! I did have to add more water to the recipe (3/4 cup), but that's because my blender is weird. I bet you if I had a ninja blender or another type that is just as good it would have worked well without that addition. It's super tasty though, especially since I used fresh basil from my little herb garden.

Anything with Avocados, you have my attention!! LOL. But I think I would want to try the bean one first. Looks very creamy and the cheesy flavor is a plus. 🥑🥑I've used Fresh Basil in smoothies before. 🌱 Bet the smell in your kitchen was amazing from the Basil. 🌞

I believe they would! I’m not as familiar with lima beans, but the only reason they wouldn’t work is because of flavor (we want a mild bean that is easily covered with the other flavors) or texture (if it’s hard to break down or too starchy). So if they are a pretty mild tasting bean and would blend/ break down easily.. then definitely go for it! I’ve used other kinds of white beans here as well. 😊😊

You could, but it wouldn't really taste much like pesto because basil is the key ingredient in pesto. So instead you would have a kale or spinach sauce. 😄 You could always do half basil and half spinach or kale if you want to reduce the amount of basil used, but I would try to use at least a bit of basil for the flavor. Good question! I think beans are generally considered “healthier” than avocados. Not that avocados aren’t healthy, just that beans are a healthier option (low fat, high fiber, etc.). 😁 I do agree with you that some may prefer the health benefits of avocados more than beans though, so it’s up to personal preference!

@@LetsEatPlants avocados are healthy but they are loaded with fat and thus a high density calorific food. Eat like that ALOT and the weight will pile on. Beans on the other hand are even more nutritious and will also boost he immune system. Hope that helps. White beans are good sources of iron too.

@@LetsEatPlants when people start to eliminate inflammatory oil, I flammability goes down and actually we start to appreciate not having it and our taste buds change. It takes a few weeks to adjust but its the same as giving up sugar in your tea. You get to appoint whereby having any sugar in tea is too sweet. Same process same principle. It's only culture that dictates using oil and of course big companies marketing strategies!!

While I appreciate the bean substitute recipes, it's the texture for me that I'm not keen on (a little powdery?), but can tolerate? The avocado has fat so a better texture, but more cals when I'm trying to drop weight.

Yep I know what you mean! I try to cook my beans a bit longer and certain beans are creamier than others, so you may like it more if you switch the bean kind. Or you can always sub with less bean and add in another fat source, like cashews, which will give creaminess without adding many cals as solely using cashews. 😊

I totally get the oil free part. I’m a big fan of Dr. Gregor and Dr. Esselstyn. But why nut free? Nuts are every bit as healthy as avocado, and are such a key ingredient in pesto. Nuts really seem to be what is missing here.

Great question! I had some requests to make pesto that is nut free due to allergies. You can definitely add nuts if you prefer (I often do). 😊😊

Nuts are high in fat and not recommended if you either want to lose weight or watch your heart. Apart from that (and allergies), yes, they are fine, in a very small amount.

Great question! Mainly because it is so calorie dense (meaning there are many calories for a very small quantity of oil) but also there have been studies showing that it is not that healthy for us in general. I still do use very small amounts of it these days, but I have greatly reduced my overall consumption. Dr. Greger has lots of great info about it (nutritionfacts.org/2017/10/17/what-about-extra-virgin-olive-oil/) as I'm sure a lot of the other plant based doctors do as well!

To be honest it looks more like a green glaze or basting than pesto. However you do show a picture of the original recipe which does look like pesto, so I'm thinking maybe you just Ninja'd it way too long. It's not supposed to look like cornstarched-soup-spread.
