好多時我寧願喺屋企煮,多過出街食😆

枝竹 五花腩 Pork Belly and Soy Sheets Stew
Ingredients
鮮淮山栗子粟米湯 Burdock, Chestnut and Corn Soup
Pork Thigh bone 豬展骨 600g
Lean Pork 豬瘦肉 250g
Chestnuts 栗子 230g
Whole corn cob 原枝粟米 1pc
Fresh burdock 鮮淮山 630g
Salt 鹽 1tsp
Water 水 2L
西芹百合炒蝦球 Stir Fried Shrimp with Celery and Lily Bulbs
Peeled Tiger shrimps 剝殼虎蝦 16pcs
Celery 西芹 50g
Red Bell Pepper 紅燈籠椒 50g
Fresh Lily Bulbs 鮮百合 40g
For blanching 烚菜用
Salt 鹽 1tsp
Granulated sugar 白砂糖 1tsp
Shrimp Seasoning 醃蝦用
Salt 鹽 0.25tsp
White pepper powder 白胡椒粉 a pinch
Egg white 雞蛋白 0.5pc (15-18g)
Sauce 汁
Ginger 薑 4g
Granulated sugar 白砂糖 3g
Oyster sauce 蠔油 15g
Water 水 1tbsp

Fried soy sheets 炸枝竹 200g
Pork Belly 五花腩 450g
Garlic 蒜頭 20g
Ginger 薑 15g
Dried shiitake 乾冬菇 6pcs
Rock sugar 冰糖 50g
Oyster sauce 蠔油 40g
Dark soy sauce 老抽 30g
Chicken stock 雞湯 250ml
Water 水 350ml

老細雖然我一路都好支持你,但呢次個糖色真係好唔掂喎,完全未到時候,咁樣只會得個甜字,同你就咁放糖分別不大,一定要炒到深啡色,會有焦糖香,夠色而且唔甜,分別好大架😂
