Hey Wil, I would really appreciate some pointers on how to select the "most correct" Vitamix blender. There are so many models and series that all seem like variations on the same thing. However, maintaining so many models is non-trivial, so there must be some reason they all exist, and by extension, it's not just a throw a dart and pick one decision, especially given the longevity. I thought I'd decided on the 5200, then I saw that the 5300 might be good. And then the 750. But what about the 7500? I could make up some numbers. I've never said this about a sponsor before, but if you did a video explaining the Vitamix product roadmap, I think a lot of people would actually watch it. I wouldn't pick a random Vitamix any more than I'd pick a random electric car.

I bought a certified refurbished vitamix 5 years ago now. It's still going strong. It is an upfront expense. But, if you buy the refurbished ones, you save hundreds of dollars. So, don't think they're out of your reach without doing research. Just a thought for those who may not normally be able to justify the brand new cost. Love your videos

Most of the refurbished ones are ex trade show demo models. All they do is replace the 'jug' (for lack of a better term). You get a shorter warranty but you can extend to 7 years I think... Bought my brother one as a gift years ago, he loves it. I have a Kitchen Aid one and it is 'OK' destroyes the rubber gear things on a regular basis and does not have the power of the Vitamix. Still trying to rationalise awapping out the Kitchen Aid for a Vitamix... might have to go for it and donate the KA to a charity shop along with a bag of the rubber gear drive cogs that it strips.

I've had a refurbished Vitamix since 2007 no problems until recently. Even refurbished it had a 7 year warranty. 16 years before any problem and I used it near daily. I need to contact them about service. The unit works, but no more variable speed. Which means it definitely doesn't work well. Hard to get smooth and makes a huge mess on the inside lid. Beyond time to call.

I have an ancient Vitamix - I think it's nearly 20 years old - it doesn't have the fancy digital display. And it's still going strong. I've never had a single problem with it, so I'm sure you'll get many years from your refurbished model.

I made this and it was so good!!! I substituted the cashews/water with 1 cup of soy milk to make it nut free, and added half a cup of nutritional yeast to keep it wfpb friendly. My family, who isn't vegan, loved it this holiday weekend!

Yeung has some very interesting techniques. In one video he advised passive cooking red split lentils in a vacuum flask. This technique cooks but doesn't break down the lentils. Now he has suggested soaking nuts! I'm starting to dehydrate my food in batches for camping and kayaking trips etc I love his ideas and they are handy for my new dehydrating food hobby.

I have tried this and it comes out delicious. I also tried it with a jar of fire roasted red pepper when I was out of artichokes and I thought it came out even better with a brighter tang and the pops of red. Thank you for a great cooking lesson.

Made it last night and served with Tostitos chips. The four of us agreed it tasted great but it needed some kick. We put about 2 tsp of Tabasco on top and that helped. I'll make this again but add 1 diced uncooked jalapeno (no seeds).

Worth mentioning that this is a blender that will pay for itself many times over. I love mine. I’ll also note that it’s worth paying extra for the more powerful motor in the professional model. Mine started to crap out after 12 years of constant use so I gave it to a handy friend in 2020. He fixed it and is still using it.

I love my Vitamix and it is till going strong after 30 + years. I love it for soup during the winter months. Paid a fortune for it new but it has worked for so long that it is cheaper than less expensive brands.

I am one of those people who prefer grazing over eating a big meal, so recipes like these are perfect for me. I adore artichokes but generally do not like them canned. I might make the effort to make a big pot of steamed fresh artichokes to use in this recipe, but I’m not sure if their texture would work here. Plus, if I’m honest, I can’t resist a steamed, stuffed, fried, or simply boiled artichoke. I’d probably eat them all before adding to the dip. But I will make this at least once with jarred artichoke hearts because I trust you Wil.

My daughter has a nut allergy. I’ll be trying this recipe with sunflower seeds instead. It’s worked well for us in other recipes.

Oe person in the comments section said they used soy milk and nutritional yeast and they say it came out soo good. I hope this helps
