This is the first lilikoi butter recipe I've seen that includes canning in a water bath. Most just jar it and refrigerate or freeze.

Enjoyed your video. First video I’ve seen that uses the traditional canning process. Love it. I do a lot of canning. By 4 cubes butter, did you mean four 4oz sticks of butter? 🤔 Mahalo, Malama Pono

Yes. Melt very slowly, carefully not to cook it. Just melted. You don't want it to brown or it changes the flavor of the final product.

When you say add 4 cubes of butter. Is it 1 block of butter or 4 blocks of butter, or 4 tablespoons?

Thank you for posting! I tried it today. However mine wouldn’t reach 220 degrees. 😞 at the end, my butter separated…. Any idea what happened there?

Yes I do. The cooking process has a tendency for the batch to rise in temperature twice. It bubles and foams and climbs "close to 220 degrees but never reaches. It then seems to lose temperature allowing it to collapse... but keep on stirring, it will rise a second time. This time, make sure it crests slightly above the 220 and stir for maybe half minute at that level... no higher - no lower, then pull it off heat and you should be good to go. Candy makers know what I'm talking about 'cause it's the sugar that needs the heat at that exact temp... not the eggs, butter, or puree. Good Luck.

Mine too, I think I put too much butter. It doesn’t say specifically how much butter to add.
