Lilikoi Cheese Cake (vegan) ☆ リリコイチーズケーキの作り方

Ingredients:
for the crust:
120g almond
30g coconut flake
30g cacao powder
30g sweetener
for the filling:
200g cashew nuts
120g lilikoi juice
180g water
100g coconut oil
100g sweetener
corn flower
Instructions:
1. soak almonds at least 8 hours.
2. make lilikoi juice.
3. put all the ingredients for the filling in a blender and blend well.
4. put all the ingredients for the crust in a food processor and make them into small pieces.
5. press the crust mix into a tart pan.
6. pour the filling and sprinkle corn flowers.
7. leave it in a fridge for 4 hours.
**I used water for the filling just because I didn't have enough passion fruits. If you could get them a lot, try to use 300g juice instead of 120g juice and 180g water. I guarantee it's gonna be much more tasty.

「作り方」
１、アーモンドを８時間浸水します。
２、リリコイジュースを作ります。
３、フィリングの材料をブレンダーに滑らかになるまでかけます。
４、クラスト部分の材料を全てフードプロセッサーで細かくします。
５、タルト生地にクラストを敷き詰めます。
６、フィリングを流し込み、コーンフラワーを飾り付けます。
７、冷蔵庫で４時間ほど冷やします。
※フィリングには水を加えていますが、パッションフルーツがたくさん手に入った場合は、リリコイジュース３００g（水１８０gを加えずに）でフィリングを作った方が美味しいので、試してみてくださいね。

I just made this cake and taste tested it and it was really creamy and good!! the crust is a bid grimy but i used too many almonds haha. The cheesecake itself is super good and tasted like a passion fruit ice cream/ frozen dessert. I also couldn’t find any of the corn flowers so didn’t add that but maybe adding fresh fruit to this will make it more flavorful 😊
