This fluffy and soft cake roll is paired with creamy taro paste and cream filling.
🌈Ingredients
Baking tray :28cm x 28cm x 3cm (H)
➡️ Chiffon cake
4 Large eggs (60-65g/with shell)
Cake flour 60g
Purple sweet potato powder 8g
Milk 80g
Vegetable oil 55g
Caster sugar 60g
Lemon juice
Vanilla extract ¼ tsp
➡️Taro paste
Peeled Taro 200g
Caster sugar 25g
Condensed milk 40g
Purple sweet potato powder 5g
Milk 35g
➡️Cream filling
Cream 200g
Icing Sugar 15g
🍀 Preheat oven to 155C/310F,Bake for 23 mins. Then adjust to 165C/330F and bake for 7 more mins.

芋泥控一定要看過來。這個芋泥蛋糕卷,綿密香甜的芋頭作為蛋糕卷的夾心餡,配上奶油真的是絕配。

紫薯粉 8克

植物油 55克
細砂糖 60克
檸檬汁數滴

去皮芋頭 200克
細砂糖 25克
煉乳 40克
紫薯粉 5克
牛奶35克
➡️奶油餡
淡奶油 200克
糖粉 15克
🍀 預熱烤箱155度烤制23分鐘,後調至165度,再烤7分鐘

老师,多次失败?达不到紫色旦糕皮,即使在调紫署粉后,把了10克柠檬汁,在与蛋黄拌后,虽紫色变淡,但蛋糕片烤后紫色完全消失,不知問题在那里?

加了蛋黄是会让紫薯里面的花青素起反应变色。 解决办法可以先把紫薯粉和少量水勾兑稀释后再和面粉混合,这样会更显色一点,还有一种就是加多一点酸性物质。 烤制温度也不要太高,以免底层颜色变焦。您试试是否有改善。

要么蛋白打发出现问题,要么就是和蛋黄混合时消泡了
