This took me a bit to figure out. I believe he said it was the stalks to the Italian parsley. He added the parsley leaves later and garnished with them and added some of the stalks to the garlic and peppers at the start, then began removing them later.

Sorry but baccala is usually very salty even if you keep it in water. You added salt to the pasta, salt to the sauce and anchovies to the sauce. OMG I would not be able to eat it with all that salt. I am Italian so I know how to cook myself truthfully so don’t need recipes but I like to see how others cook.

He is using Fresh Cod Fish not dried which is why he added salt to the fish. The person filming him clarified this by asking “you’re using fresh cod fish” and he answered yes. Therefore, the recipe is not overly salty.
