I had just watched this video last night and had heard of an Instant Pot and thought how nice it would be to have one and low and behold today July 4th 2020 my Mom and I went to a very small gathering of friends for a cookout and I saw on our hostesses counter an Instant Pot. I asked her how she liked it and I told her about your channel and how you made each dish look so easy and delicious. She left the room and came back in a few minutes later carrying a brand new Instant Pot in a box which had never been opened and said she just had an extra one and wanted to know if I would like to have it. Now that's a God Thing ! Now I can't wait to get started. Thanks so much for all your wonderful sharing. You and your husband have been blessed with many special talents. Blessings, Teri

I recently discovered your channel in search of gardening tips and I can't thank you guys enough for your wealth of knowledge in so much more! Our family is hoping to provide homegrown food with the ability to preserve what we grow. Your family has gone above and beyond what I could imagine doing for our family. Your channel opened my mind to exploring so much more for our lives. Animal keeping, gardening, canning, preserving, new recipes. All I was seeking was how to garden successfully and now I've gained an entirely new journey. Thank you for your labor on the homestead and for sharing your experiences!

FOR THOSE WITH A CROCKPOT: Put your beans and water in and let sit overnight. The next day rinse and put more water in with your seasonings then turn on low or high. 6 to 8 hrs later beans are cooked and you can add your ingredients. I personally soak overnight then add chopped onion, venison, corn, green beans and seasonings. Cook on low all day and right before dinner time add a can of cream of mushroom soup (or homemade) and make cornbread!!!! I have fed our family of 6 and another family with 8 people that had hit a hard time using one crockpot of that!!!!

Hi Sarah, my mom used to bring the beans to the boil, drain, put water in again, bring to the boil, drain, then cook the beans in the amount of water required to cook them (this stopped you from bloating and giving off gas, as my mom put it,. It worked. Does anyone else on this forum do that? Thanks for the tips and recipes, will sure try them out. We are fine, just rice, pasta, canned tomotoe, tomotoe puree shortages around here in the UK. We are fine, as you say just using what you have in your house, now is the time to get creative.Take care every one, enjoy the time together.

I think it is great that you are helping out all those people who stocked up on foods they don't normally eat & now are puzzled what do do them! Two approaches are: 1) Look up classic recipes from other cultures. Almost every culture has vegetarian, non-meat or legume based dishes (like your Indian & Mexican recipes). Think Boston baked beans, minestrone, pea & lentil soups, hummus & falafel. 2) Replace the meat your favorite recipes with legumes. I make my spaghetti sauce with lentils instead of hamburger, and use beans in soups & casseroles in place of meat.

Hi there! Amazing video as always! You're are such an inspiration for calm times and a relief in times like this! I'm Brazilian, and we basically eat beans and rice in most meals. If we don't eat rice and beans every lunch and dinner we feel like we didn't had a meal! A tip: let the beans soak for at least half an hour and dispose of this water. It has a lot of "anti-vitamins" and if you eat this, it won't be as nutritious as it should be. And I recommend cooking it with a pinch of salt, so it will be softer and easier to season later. Here we don't drain the beans, we like the "sauce" and I like it creamier, so I usually cook for 5 minutes more. The standard beans in São Paulo will be pinto beans, seasoned with a little bit of fried garlic and onion, salt and black pepper, and a laurel leaf - it will taste better, fresher and will prevent to ferment. Beans freeze amazingly. Cook 2 pounds a time, a little less time than usual, and portion it out. It takes 15 minutes to boil and be read to eat. Ah! And an amazing recipe that is hearty and filling is feijoada. It's a Brazilian slave food, made with whatever is left of pork (ear, nose, feet, lots of sausage and bacon) and black beans (that the slaves owners didn't like as much). Basically, you saute the meat with onion and garlic (yeah, we use lots of onion and garlic with everything, including rice that is delicious this way), put the beans and laurel and let this cook until everything is soft. Serve with rice, finely chopped kale (as a salad or sauteed with garlic), some type fo farofa (that is a whole another history) and some pepper sauce. Eat an orange after, it will help your stomach to process all of it! And a nap, truly, is a must after. Stay safe!

Speaking of Taco's. I got inventive once and used mashed peas in place of refried beans. I used canned peas they are much cheaper than refried beans to. It worked pretty well with a similar texture. It isn't something most people think of, and isn't grainy like humus can be.

Back in the day, as a fire inspector, I inspected a company that made grocery store items. They stamped out paper plates. They made plastic bags from silos of plastic pellets. They even bottled charcoal lighter fluid. One thing they did was bag dried beans. An auger brought the beans in from a rail car. The machine had a mechanism that portioned a little bit of dirt and gravel into each bag. They said they were bagging cheap beans. When they bagged premium beans, they turned the dirt adder off. They said they had to add dirt because otherwise folks wouldn't pay the higher price for clean beans. You gotta love American ingenuity! 🤠👍

If you put in onions, celery, garlic, bell pepper, jalapeño when you pour off the bean water you can instead bottle the water as vegetable broth. We do. You can then freeze for use in another meal instead of buying expensive broth at the store.

Looks good - there's only 2 things I do differently. 1. I don't throw away the bean liquid - that's called "pot liquor" and it tastes fabulous! And you can use it to thin down the beans if you mash them. 2. I never use those pre-formed taco shells!!! OMG! They taste like cardboard. Get corn tortillas at the store and fry 'em up in the pan if you want hard tacos or heat them on the burner (or in the microwave) until they are hot and put your fillings in. SO much better tasting and it only takes a moment. -- Also, you can fry the tortillas, leave them flat, and make tostadas.
