Loaded Cauliflower Rice Casserole

OMG I just made this and it tastes like a potato casserole. So good. I used half sour cream and half cream cheese. I topped it with a mixture of crushes pork rinds and shredded cheese. I also just chopped up my cauliflower instead of ricing it. I also baked it for 30-40 minutes because we like a crispy crust on the top. Also used minced onion instead of chives. (I didn’t have any chives. ). I also beat one egg to bind it more and I added sliced polish sausages to give it more protein. Chicken would be good too. So much you can do with this recipe. On with the “toppings” a light sprinkle of Cayenne pepper really adds a mild kick!
