I just finished cooking this, and now eating it... THANK YOU, after a year and a half on keto, and 45 kg lost, I can finally have "rice" again. Actually, this is far better than rice! Both in flavour and, most importantly, in nutrition. Thank you! Subscribed. Greetings from Argentina. (I used shredded olives instead of peas, and extra virgin olive and coconut oils, also coconut aminos+turmeric instead of soy sauce, and some cayenne pepper to give it some "punch")

Great substitutions! I use Bragg's Aminos, in place of soy sauce. I sometimes like a touch of ginger as well.

@@KatTheScribe I make "fried noodles", too, but instead of noodles, I use either sliced cabbage, or if I have time, make noodles with sesame + cumin seeds flour, using a grinder. I fry it in grassfed lard or tallow, or coconut oil, and always finish it paprika. Some days ago, it was my birthday..., Wasn't going to take having no cake, so, managed to make my own chocolate cake, it came out INCREDIBLE, no flour, zero sugar, low carb. And without looking for recipes. If I had time, I would upload my own recipes, next on my list are making low carb Argentine Empanadas, Keto Dulce de Leche, and Keto Paraguayan Chipá (cheese puffy rolls)

I used to hate cauliflower but frying it totally transform the taste and smell! This recipe is amazing and you can use it as a replacement for rice, potatoes, pasta and it's alot healthier! It more or less saved my keto diet progress

First time I tried making cauliflower rice I used a box grater like she did. Never again. Take my advice just wash and chop up the cauliflower into chunks and pulse chop/grate in a food processor. So much quicker and less mess. Hand grating takes forever and little pieces of cauliflower fly all over. I also washed my cauliflower and let it dry in a colander for a half hour before processing. I cook it in a large cast iron pan with a tablespoon of olive oil with the cauliflower spread out in a thin layer. This prevents and sogginess and the cauliflower from steaming and get soggy. With a thin layer you are essentially drying it out slowly over a low to medium heat. Then after about 20 minutes I stir in any seasoning and butter to flavor or whatever sauce I want for flavoring. It comes out perfectly nice and firm and not over cooked and not mushy or soggy.

This was absolutely outstanding! I made a big batch and had about half left over. Traditional fried rice doesn't reheat well. The rice always gets hard. But this reheated beautifully. I left it in the same pan as I made it in and I didn't even have to add any oil. It may even have been better the next day. You would never know this was cauliflower instead of rice. Definitely a keeper that's going in my rotation! Thank you! EDIT: I've since made this with diced cooked chicken and diced cooked pork. Excellent!

I've been serving cauliflower with spicy sauce dishes for years as a way of cutting down on carbs, and this is the first time I've come across a recipe. I'd never thought of grating it and doing it like fried rice, can't wait to give it a try. Lots of easy to follow, practical videos, thanks!

Eating carbs / rice for me means my weight will go up 3-4Kg in just one week. I’m so happy I discovered cauliflower rice, yes it’s not the same thing but I would say it’s 60% similar to regular rice

I tried making this tonight, and while it was tasty enough, I just couldn’t get it to dry up like fried rice. It still had a general soggy quality to it, which seemed to dull the spices quite a bit and also keep the dish from capturing that elusive fried rice feeling. I wonder if my issue had to do with not turning up the heat for long enough, or the fact that I wasn’t able to cook in an actual wok. Have you ever run into issues of things not crisping up enough?

I know woks need to be really hot to steam off the moisture as your cooking, you should hear it crackling for sure. Hope this helps

Lots of people put the grated cauliflower into a cheese cloth or something to squeeze out the excess moisture before cooking.

I put the grated cauliflower in the oven 200 degrees F for 5 minutes then stir it up a little put it back in the oven for another 2-3 minutes then ready to cook for fried rice/ cauliflower.
