Kristie, I made this yesterday for my father-in-laws birthday get together. I actually made it for my husband and I so we would have dessert like everyone else when they were eating birthday cake. It was absolutely amazing! I think it's the best low carb dessert I've made yet and I've made a lot. Even the non low carbers loved it! Thank you so much for this recipe! I will be making it again for Easter dinner at my mom's house.

I just found an amazing cream cheese frosting technique. NO butter, but you make a nice thick whipped cream and fold in your whipped cream cheese with confectioners sugar and it is SOOOOO much better and less sweet and fluffier . I will never go back to the old cream cheese frosting... :D

ya, this bread thingy is so new to low carbers ,that trying anything could be a make it or break it ! what about the flat bread or the fathead pizza crust ? i made rolls from the fathead recipe and I'm thinking that just maybe the winner ! the texture seems to be perfect : i do put a little more almond flour in it to get the doughy feel to it: i think ill try it today , a small portion. i also send my sister , Renee- your site ,so when she has time she can listen to your experience which I believe is awesome! also I noticed you picked up the fabulous use of glucomannan : hopefully we find new products that may really help with the texture of the , ALL HOLY GRail< BREAD!! teehee! let me know how your stuffing turns out ,and i will let ya know how mine did: blessings and merry christmas!

My Sukrin products just arrived today, so I'm planning to make the pecan pie tomorrow! Then this dessert the following week. It looks amazing! I loved hearing your friend's family's experience with keto. As a diabetic myself, it's so encouraging to hear that her hubby is completely off meds and doing so well. I've reduced my insulin greatly, as well as my A1C, but still have some tweaking to do. It would be great to find out what the lemon cheesecake recipe is that she mentioned. You could have her on as a guest to show us sometime. My best friend is now on week 3 of keto, and we're both big fans of lemon desserts.

I'm glad to hear that your husband is no longer on the meds for diabetes. Those statin drugs are very dangerous. They can actually cause high blood sugar. Kristie, love this recipe. I may just have to give it a try.

Mrs kristy I have a question I have been trying to make low carb cheesecake and follow your recipe and when I bake mine they do not come out smooth they look like cottage cheese in the middle am I baking them to long? thank u for the help.

hmmm....is the batter well mixed and smooth before you bake it? I've never had that happen. are you letting them cook long enough and are you letting it cool overnight in the fridge? are you using a store brand or generic cream cheese with a lot of additives? it could be any of those things. I'll keep thinking.

How do you keep from getting a gritty feel to the icing? I use erithritol confectioner and a stand mixer but it always has a fine grit feel, idk what I am doing wrong

So I logged this on MFP and I made the serving size 12 slices. Bear in mind that almond flour usually has 6g carbs per 1/4 cup, but also 3g fiber per 1/4 cup, therefore 3g net carbs per 1/4 cup or 12g net carbs per cup. So this recipe has 24g net carbs total from almond flour. (I used Bobs Red Mill almond flour as an example.) www.myfitnesspal.com/recipe/view/173479680576701
