I would have to yweak this recipe because I can't have kale or most beans/legumes unless fermented because I have to be low fodmap. Also if you want low fat with some form of red meat you could grind up some beef heart. Red meat is a big part of my diet because of my hashimotos affecting absorbtion of B12, k 2, folate, heme iron causing anemia which I've had issues with since age six sometimes bordering on life threatening. Aside from that this is really good.

So happy that I can still have small portions of red potatoes, as long as long as the starch is washed off, they don't spike my glucose at all. I put a tiny portion of them in chili.

What about kale and people who are taking blood thinners, like warfarin? Should they then begin taking daily and consistent amounts if introducing food with higher levels of vitamin K, like kale?
