Low Carb Keto Blueberry Cheesecake Popsicles
Blueberry Jam
2 cup (380g) Blueberries
1/4 cup (38g) Sweetener (I used Allulose)
1 Tbsp (15ml) Lemon Juice
Cheesecake Popsicles
5 oz (142oz) room temperature Cream Cheese
1/2 cup (145g) Greek Yogurt or Sour Cream (I used Two Good Vanilla Greek Yogurt)
2 to 3 Tbsp (26 to 36g) Sweetener
1/2 cup (125ml) Heavy Cream
1/2 cup (125ml) Almond Milk
In a saucepan, over low-medium heat, heat together blueberries, sweetener, and lemon juice. Allow to simmer for 20 minutes or until mixture becomes thick. Once the mixture thickens, remove from heat and allow to cool.
While blueberry jam cools, blend together room temperature cream cheese, greek yogurt, and sweetener until smooth.
Once cream cheese mixture is blended smooth add heavy cream and almond milk.
Fold the blueberry jam into the well blended cream cheese mixture then add mixture into silicone popsicle mold. amzn.to/3nZEz2C
Freeze overnight
