These Swedish Meatballs are a big hit with my family. I hope they'll be a big hit with your family too.
Low Carb Keto Swedish Meatballs
1 lbs (454g) ground/minced Beef
1 lbs (454g) ground/minced Pork
2 tsp (11g) Onion Powder
1 tsp (5g) Garlic Powder
1 tsp (5g) Salt
1/2 tsp (2g) Pepper
1 tsp (5g) Allspice
1/4 tsp (1g) Nutmeg
1/4 cup (25g) ground Pork Rinds
1 Egg
2 Tbsp (30ml) Heavy Cream
For Gravy
1 1/2 cups (356ml) Beef Stock
1/2 cup (120ml) Heavy Cream
2 Tbsp (30ml) Worcestershire Sauce
1 tsp (5g) Dijon Mustard
2 tsp (3g) Arrowroot Powder (or 1/4 tsp Xanthan Gum)
1 tsp dried Parsley
1/2 tsp (1g) Pepper
Avocado oil (you can use coconut oil, ghee, bacon grease, or tallow)
In a large bowl mix together minced/ground beef, mince/ground pork, onion powder, garlic powder, salt, pepper, allspice, nutmeg, ground pork rinds, egg, and heavy cream.
Once mince mixture is combined well, roll into 1 to 1 1/2 Tbsp size balls.
In a large skillet, over medium-high heat, heat 2 to 3 Tbsp (27 to 40ml) of avocado oil (you can use coconut oil, ghee, bacon grease, or tallow) . Once oil is heated, fry meatballs on all sides, about 5 minutes on each side.
Once meatballs have cooked on all sides, remove them from the pan, and drain excess grease from the pan.
In the pan add beef stock, and 3/4 of the heavy cream, Worcestershire sauce, and Dijon mustard. Mix together remaining heavy cream with arrowroot powder to make a slurry and add to the pan with beef stock mixture. Once combined well, allow to simmer and thicken for 10 minutes.
Add dried Parsley and Pepper, then add meatballs back into the pan. Allow meatballs to heat through then serve. They go great with mashed cauliflower.
Makes 6 servings: Per Serving 478 Calories; 44g Protein; 31g Fat; 4g Total Carbs; 0g Fiber; 4g Net Carbs
