Low Carb/ Keto Recipe: Soft "Oatmeal" Cookies (Using Lupini Flour and Lupini Flakes)

**PEANUT ALLERGY WARNING!!!*** Lupin Flakes and Lupin Flour are made from the Lupin Bean which is a cousin of the Peanut. Individuals with a peanut allergy may want to avoid products made with Lupin.
One thing I miss since going Low Carb/Keto has been Oatmeal Cookies. Using coconut flakes and nuts is fine, but just not right. Recently I found Lupin Flakes and it has changed everything.
Low Carb Keto Soft "Oatmeal" Cookies
1/2 cup (1 stick/113g) room temperature Butter
1/4 cup (46g) Allulose ( you can use Xylitol, Monk Fruit, Erythritol)
1/4 cup (70g) Brown Sugar Swerve (you can use Golden Monk Fruit)
1 Egg
2 Tbsp Almond Milk
1 tsp Vanilla
1 tsp Baking Powder
1 1/2 tsp ground Cinnamon
1/2 tsp Salt
3/4 cup (72g) Almond Flour
1/4 cup (32g) Lupin Flour amzn.to/2QqqHli
2 Tbsp Coconut Flour
1 Tbsp unflavored Protein Powder
1 cup (120g) Lupin Flakes amzn.to/31e7iX8
Preheat the oven to 350 F/ 177 C.
In a large mixing bowl, cream together softened butter, allulose, and brown sugar swerve. Once creamed, add egg, almond milk, and vanilla.
To butter mixture, add baking powder, cinnamon, salt, almond flour, lupin flour, coconut flour, protein powder, and lupin flakes. Mix together well.
Once all ingredients are well combined scoop 1 to 1 1/2 Tbsp size balls of dough onto a lined cookie sheet.
Bake in a 350 F/ 177C preheated oven for 12 to 14 minutes until cookies are golden brown. Allow cookies to cool about 10 to 15 minutes then enjoy.
Makes 16 cookies: per cookie 120 Calories; 6g Protein; 10g Fat; 12g Total Carbs; 4g Fiber; 1g Net Carb
