I'm surprised a chef of his caliber, doesn't know that you can peel garlic in 1 second by simply smashing it.

MrBeatboxmasta ....yes you can smash it with the skin on....then you will have little bits of skin mashed into your garlic...that's wry you peel it...good chefs know this....quality over short cuts!

Gerry Gardner - I've literally never had skin mashed into my garlic. Last time I checked, Gordon Ramsey, Marco Pierre White, Jaques Pepin, Bobby Flay, etc. are "good chefs" and yet, they give one smash their garlic with the side of their knives. The only time they don't do that, is when they need to cook the cloves whole or want slivers as opposed to fine pieces. What do those chefs know anyway? Most of them only have Michelin star restaurants, so I guess they know nothing.

crush your garlic a bit with you hand or knife before you peel it, the paper just falls off and you'll never want to do it any other way

Olive oil on the garlic to be sticky? Not knocking the fact that he's adding olive oil but I contest the reason. Every fresh garlic glove I've ever sliced has been more than sticky enough to chop.
