In traditional Spanish cuisine, a gazpacho is a dish with bread. There is a traditional dish, called gazpacho manchego, that is a stew of fowl and small game served in hollowed loaves of bread, a shepherds and hunters meal. Gazpacho, the soup, was originally an emulsion of cold water, olive oil, sherry vinager and bread, something like a cold bread cream, with diced vegetables floating in it, a refreshing peasant lunch in the hot southern summers. Then came the blenders and there went the vegetables, too. Nowadays many people skip the bread, but it makes all the difference in texture, because the oil emulsifies much better and it keeps everything together if you keep it in the fridge. Without bread, it will separate and water will rise to the top. I start with crusty bread soaked in cold water, add the oil and blend it to a smooth cream before adding the vegetables. Cummin goes great with it, by the way.

I am living in France after 14 yerss in Spain and Portugal and one thing I have learmed is the idea that they can cook is a total myth. I have yet to have a good meal. Either home cooked or in a restaurant My hosts cant cook to save their lives. If I offer to cook one grumbles about 'English cooking' yet has never left anything on his plate and usually has seconds or the leftovers for his supper. My friend tells me food should be fun, so she makes it up as she goes along. Unfortunately she has No idea of what goes with what or how long anything should be cooked for. I found her boiling eggs for 45 minutes once. Another time she served up duck gizzards that they could have used at Wimbledon instead of balls, except that they may have been too bouncy. As for making it up, it is helpful to know what works, not just go to the cupboard and grab random ingredients. The strawberry made me laugh. I would go with Jose C if you want traditional Spanish gazpacho. I apologise to good French cooks out there, it's just that I have yet to meet one. Lol
