This Lychee Agar-agar Jelly is very refreshing and simple to do.
❤ Ingredients:
1 can lychee, 565 grams (16 lychees) 荔枝 1个罐头,565克(16粒) (Shopee Link: shope.ee/6zhxt...)
10 grams agar-agar powder 燕菜粉 10克

200 grams caster sugar 细沙糖 200克
120ml lychee water 荔枝糖水 120毫升
680 ml water (room temperature) 水,室温度 680毫升
200 ml soya milk (unsweetened) (room temperature) 豆浆(无糖),室温度 200毫升

Hello, I want to know the first part of jelly, 120ml lychee water mix 680ml water, so there are 800ml liquid, but second part the white jelly, you then add 200ml, will that be more liquid, what is the liquid proportion? Thanks

Hi, In total 10 grams of agar agar jelly for 1000 ml water. The proportion of powder to liquid is less for the coconut milk portion so that part will be a slightly softer in texture.

Hello Ruyi.. The agar2 powder I have in Indonesia is 9 gr per sachet to be mixed with 1.100 cc water. As the composition is different with your agar2 powder, I mixed all these for the jelly mixture: 9 gr agar2 powder 700 ml water 150 ml lychee syrup 200 gr sugar For the remaining 1/4 Cup, I mixed 250 ml Lactasoy unsweetened soy milk (Thailand packaged soy milk) with around 250 ml jelly mixture but it ended up not enough to cover the whole lychee. How much should I adjust for the 1/4 cup jelly mixture? And I am not too sure, is it okay to heat the packaged soy milk?

@@ruyiasianrecipes My mould is 8 inch. What I meant is that after I poured the remaining 1/4 cup jelly mixture in, I still can see the head of the lychees.

Ah I see yes you can heat up the soy milk, low heat so you can add 1.5 grams agar powder and 180 ml soy milk plus 35 grams sugar

Ms Ruyi after adding the soya milk mixture is it no need to boil.

Yes don’t need to. Then cover it with the lid so that it doesn’t solidify quickly. If it does solidify before you pour it into the mould, just heat it up slightly with low heat

Can I kno how much agar agar liquid add to soy milk? Saw its written 1/4 may I kno 1/4 is how many ml or is it 1/4 cup agar agar liquid mix with 200ml soy milk?

Yup it should work just follow your packet instructions for the water amount. My agar agar packet is 10 grams for 1000ml water so I use lychee syrup + water = 800ml and 200 ml soy milk ☺️

Hi not it won’t be too soft. You can test by scooping up 2 tablespoon into a small saucer and place in the fridge.

I left mine in the fridge overnight, but the toplayer is still liquid... Can i do anything haha? Or did i just not enough agar agar?

Oh hmm 🤔 normally agar agar solidify very well. Top part is the soy bean part? If you want to salvage it, you can remove the that layer and add more agar agar powder and boiL again and redo the top part.

@@ruyiasianrecipes Update: It worked! I scraped off the top layer, redid it and now it was enough agaragar. It didnt stick to the bottom layer very well, but enough to serve and have fun with it x) enjoyed this very much thanks!

Hi, Ruyi.. i have a question.. the balance Jelly mix with soya milk and how to keep? Cos i worried if put until others ingredients firm and the part of soya milk will be firm too??😁

Oh yeah just cover it and also when it’s in the pot it doesn’t cool as fast as the jelly in the mould ☺️ or if you are worried don’t add the soya milk first once you finish arranging all the lychee, heat up the remaining agar agar mixture on low medium heat then only pour in the soya milk and mix and then you can pour on top of the first layer

@@ruyiasianrecipes it said add 93g of shaky jelly to 250ml of boiling water. Stir until completely dissolved. Add another 250ml of gold water and stir till uniformly mix. Pour into moulds and chill until set.

Hi I’ve not used torani lychee before. Not sure on the effect but if you want to add flavouring may want to add after the stove is off. Also based the ingredients I saw on the website there is caramel in it so it will affect the colour of the jelly. If you are using lychee from the can, the lychee syrup itself is very flavourful so might not need to add the torani lychee. You can add more lychee if you prefer stronger taste. Hope this helps ☺️

Would it be possible to pour the clear lychee jelly layer on top of a no bake cheesecake?

Hi I think it’s possible but you need to wait until it cools down so that it doesn’t melt the cheese layer. It usually thickens slightly below 60 degrees Celsius. If you are not vegan it’s better to use gelatin cos the agar agar tend to release liquid after removing from the mould

Oh no 🥺 sometimes different powder have different water ratio to set. Which part didn’t set? The soya or clear layer? You can add another 2 grams of agar powder. Before you place in the mould, keep the pot on lowest heat , scoop up a little amount place in a small saucer, place in the fridge and see whether it sets . It should set within 5 min. Just test whether that is the consistency you want. If still not set, dissolve another 2 grams powder into cold water first then add into the pot and boil again and retest. Hope this helps

香港的印尼食品店有售 or 馬來亞食品店也有售, 很便宜. 你嘗試去找找吧!

Hi Ruyi, thanks for sharing. I really love how you present your recipes in clear and simple steps. I have difficulty finding this brand's CLEAR agar powder. Can I replace with White? Not sure if it will blur out the Lychee tho. Tks.

Hi you can use another brand. Other brands don’t have colour like “Pearl Mermaid”

Hi I have not used Japanese agar agar before. I just googled it and I think it may give similar texture

你好,燕菜粉做出来的果冻比较硬的,所以吉利粉不太适合。可以用果冻粉“konnyaku jelly"
