Thanks for sharing this pudding recipe. I have recently joined KZbin and am very much enjoying your videos. Some recipes are a bit difficult for me but yours are all fun to watch anyway. Your work space is so clean and your Emile Henry ceramics look handsome.

I baked pudding with this recipe yesterday. Delicious. The texture was harder than I had thought, which was good for me because I like hard puddings. Next time I will shorten the bake time and see if it comes out soft. I will also try to make less mess while pouring the appareil into jars. Haha. This is a recipe that I will use again and again.

The glass jars I use for puddings are reuse of jam bottles. They look great and the bottle necks are just convenient when transporting them between the kitchen counter and the oven. This time, however, I used ramekins instead to see if my puddings would come out upside-down clean like the ones in the video. The ramekin puddings came out much softer, which may suggest that extra 5 minutes of baking would be necessary. The upside-down process went fine except that the soft puddings spread wide and did not form a firm dorm. I will bake again to create a smooth, elegant matcha pudding dorm.
