God, I am so glad I landed on your channel. I am from Baghdad. I live five years and Lebanon and I loved Lebanese food and nothing I eat from restaurants. All I make is homemade but I’m trying to look for sage everywhere, I even looked here in America, some places antique places in the farmers. I can’t find it to make those Lebanese breads. Hello thank you so much for your kind words. I have many friends from Baghdad and we love Iraq. The saj is a little hard to find in America. I brought mine from Lebanon, but before I had one I used to flip a wok upside down and used it as my saj.

Amazing how techniques are universal..check out the Sonoran handkerchief style tortillas, and the amazing lady who shapes/stretches them at Herencia de las Viudas..amazing video of her making these almost identical breads, shapes at least..have to be in awe of these ladies who have had thousands of these breads shaped by their hands and hearts

Your hand movements are so graceful 💛 Clearly you are an expert. This is so much like the Rumali Roti from India. If I ever go to Lebanon, I will bring back a Saj oven. Even if it means, I can only carry 2 pairs of daily clothes with me.

Wow, thank you so much! I loveeeee roti! I recently saw online that a young Lebanese girl invented a mini portable saj which seems really cool. I think you can order it online. But before I brought mine from lebanon I used to flip a wok upside down and use that for my saj.

This is so wonderful immediately after cooking. When I lived in Kuwait I'd buy one on the way home and 9 times out of 10 the bread never made it home in the car. Cost 15 hallalahs which was then (20 years ago) about $0.05.

In hispanic culture, I am used to making tortillas. I always thought the tortilla was saj bread, but now I see the yeast and sugar added, awesome!!! The way you stretched the dough is what you see in streching pizza in Napoli. But you are an expert here. Skill so good

I bought them in Lebanon. However, you can use any soft pillow about the same size. Just make sure you use new cover.

Make sure that you cover them completely with a dish towel or sheet for about one hour and once they cool down completely fold them and transfer them to Ziploc bags you can then refrigerate them or freeze them.

Hello! I love this thin bread for taste and health benefits as well. Yes, you do need the yeast for this recipe. I like to use active dry yeast. I also really like it with whole wheat flour for extra healthy bread. It’s very tasty.

There are a few factors that might impact how much water you need. I suggest adding water slowly. That way you can control your dough to your desired consistency.
