When you switch temperatures, do you remove the cake from the oven and wait for the oven to reach each desired temperature and THEN place the cake back into the oven?

I have added some common trouble shooting answers in the description box, make sure you have a read. One very important thing I forgot to mention in the video is the height of the water for the water bath - should reach about halfway the height of your cake tin otherwise the cake will rise too quickly and sink afterwards!

I just made this and it's so good! It has a very mild taste, not very sweet, but the texture is to die for! So fluffy and soft and melts in your mouth. I only had a glass pyrex to bake it in and it was fine. Mine had a huge crack at the top because I think I overfilled mine so be sure to follow the video and leave some room at the top. Thanks for the recipe!

I’ve researched several recipes online and this is the best recipe I’ve found. I love my Japanese soufflé cheesecake tasting more like a cheesecake and less of a sponge. Thank you for sharing this recipe! Japanese soufflé cheesecake is my favorite cake. Now I don’t have to go out and buy my own. I can pretty much bake my own whenever I crave it!

This is one of the better, clear recipes. I have a fan oven, used bottom rack at 400f for 15 min and then 302f for 30 min. It rose and did not deflate. Each oven is different and a lot of trial and error. Took me 2 tries. It also depends on how you do your egg whites since this is most crucial part of the baking process. Batter also should not be too runny

Made it today but extended another 10mins at 140°C to 40mins just to make sure cake will be baked well inside. Had a big crack on the top of the cake after first 15mins at 200°C. But inside was very soft fluffy and melt in your mouth. Thanks for the recipe!

I've tried many recipes and failed. Yours was the easiest and came out the best. I adjusted my ratio to a 7x3 round pan but same technique. I still had cracks despite the temperature went as high as 190 C°. I think the waterbath prevented it from ever reaching 200 C°. Still came out great! Thank you!!!!!

So glad to hear that! Thank you so much for the feedback 😊 You’re right, the water bath prevents it from getting too hot. Though try lowering the temperature next time maybe to 180, it should help prevent cracks from appearing.

I can’t be certain I’m afraid as I haven’t tested that combination myself yet. I reckon the method can remain the same, though the batter will have more air given the additional egg whites folded in so you might need to adjust the temperature/baking time accordingly as it might rise a bit more. Let me know how it goes, curious to know the outcome!

Greetings from Russia! We made 2 cakes at once and gave them as a present to our parents on Women's Day. What a wave of delight it arose! They began taking pictures, praising us for such a beautiful dish and then we had a family dinner together, where everyone really enjoyed this tasty masterpiece. Then, they gave us the second cake and asked to share with my husband's brother and his wife who live just nearby. So we took it and quickly phoned them. They were so surprised to see a homemade cake which was also so neat-looking ! Both the cheesecakes came out super light, fluffy and delicious but I found that the vanilla extract in the second cake had helped reduce some of the strong, tanginess of the cream cheese flavour (which I preferred) 🤤

the flour brand called 'lighthouse' @ woolies and coles sells 'biscuit pastry and cake flour' (it's pretty much just low protein plain flour I believe :-) makes the end result even fluffier, not necessary though but adds a neat bonus! )

Hi, thank you so much for sharing your recipe and your explanation. I've tried this cake at least 10 times using other recipes but they all failed (they all deflated dramatically after turning down the heat, some even looked like there is a crater in the middle. I've got a gas oven and I thought they may have affected the result, so I even tried using a friend's electric oven, but that still failed). I tried your recipe and method (for 8 inch pan, doubling the ingredients) and finally it worked! The cake only deflated slightly as expected even long after the heat was off, the taste was great! However, I had a large crack at the top, hence I probably have to adjust the oven temperature next time. My cake wasn't as jiggly as I've hoped, not sure if it's because I'm using an 8x2inch pan (but I've lined the sides of the pan higher than pan height). Nonetheless, I'm super happy finally getting it after having so many failed attempts. THANK YOU!

I'm SO happy to hear that! thanks for the great feedback :) For the cake to be jiggly, I would advise using a taller tin (mine is 3" tall) and the cracked top is because the oven is a bit too hot and perhaps the batter is filled to close to the top? Regardless, I'm sure you're going to master it your next try, enjoy!!

Tried it the other day and was really surprised how well it went (first time trying). Bottom layer (around half a centimeter) got soggy due to me using a springform tin (now got a one-piece tin, but didn't want to invest blindly) but it still came out great. I also replaced the cream cheese with yogurt (125g; so I didn't have to open a 250g cream cheese pack).

@@aimentariq7435 No significant difference as far as I can tell, but it was firm yoghurt as far as I remember, so it was almost like curd/cream cheese. The batter is rather liquid, so should make little difference overall, whether it's a bit more liquid in there or not.

3:00 If you want to do this method you should strain the mixture into a clean bowl as "folding" in the whipped egg whites gradually makes sure the mixture stays airy and keeps the fluffiness at it's maximum.

After trying many different recipes multiple times...this is the only recipe that works for me every time, thank you! Very jiggly. I have a small fan oven, and find that the only issue I'm yet to conquer is that the top of my cake always cracks. I start at around 140 degrees, wrapped the insides of the tin with baking paper and mixed the egg whites ever so slightly less (just before stiff peaks and very shiny) which did help significantly but it still cracks slightly. Any suggestions on how I can try prevent this?

This is my very first time doing this deliciousness. I just found out that my oven doesn't go any lower than 170 degrees 😢 so to compensate for the Temperature issue in this stage, I decided to bake it for 25 minutes instead. I'll share the end result of this all.

@@Ana-hr3ll horrible result. As I said, since my oven doesn't go lower than 170 I baked it at that 25 minutes instead. After 25 minutes, it was still liquid. So it leaves me with a doubt: what the hell happened in the first stage then? I mean, I removed the pan from the oven and it was still liquid, the only difference was that it was bubbly. My first fail in soooo many years of cooking and learning and trying everything I can.

She used Celsius so 140 Celsius is about 284 degrees Fahrenheit. Does your oven use Fahrenheit? Not sure if thats what happened, just throwing it out there.

Thank you for including the pan size! I used small eggs but the batter was somehow too much for my 6x3in pan so I scooped some batter out in case it overflows. But maybe my water bath was not sufficient the top cracked. But I will try again. Thanks for the recipe.

Thanks for recipe. I made it and it turned exactly how you made , but one problem I got after when it baked I saw a thin egg layer on the bottom of the cake (not fluffy as rest of cake). Could you please tell me maybe I did something wrong? But when I make as swiss roll with the same recipe I don't see this problem.

Hi there, thank you for sharing this recipe. I doubled the quantities of each of the ingredients as I was using a cake tin that was approx double in size compared what you used in the video. Given that I didn’t have cream of tartar, are used vinegar instead added to the egg white mixture. I wasn’t sure if the vinegar was meant to be added before the egg whites were meant to be beaten or just added at the time the egg whites are ready to be beaten. Despite using a handmixer with attachments almost identical to yours, I wasn’t able to achieve the fluffy white peaks that you described in your video. Despite using it on high setting for five minutes. I do not have a cake mixer, I simply have a handmixer. The only other difference to your video was that I pulverised my raw brown sugar using a grinder into a fine powder. I don’t know if this had a factor to play in not being able to achieve the fluffy white texture of the beaten egg whites.Would love to hear your ideas or comment

Sometimes the issues lie elsewhere. A mistake I often see is people mixing the cake batter, then quickly rinse the mixer and try to beat the egg whites with it. If your batter has any kind of fat in it (butter, oil), you need to clean the mixer properly with soap before touching the egg whites with it. Maybe this happened to you?

It worked well, other then cracking a little not bad for a first try... next time might try some zest just to take the egg flavour away.
