That's why ceramic blades get imbued with a small amount of iron so it doesn't pass in customs. Not sure if all manufacturers do this nor where it is mandatory by law but I remember seeing this on How It's Made some years ago.

It’s kind of fishy. It’s usually on top of takoyaki and okonomiyaki and such. You can also make a stock out of it, which tastes wonderful for udon soups

It’s truly awesome to see how katsuobushi is made. Apparently you can tell it’s moisture content by the sound they make when being tapped. Not sure if it was trails or Japanology but NHK did a program on it once. Dear God don’t cut yourself doing this 😣
