Beautiful prep. Beautiful result. While nobody was looking I’d be eating all of small pieces of Ribeye Cap she cut up separately. Haha. I always try and bless each steak piece with some Ribeye Cap still attached. Many a family feud have been avoided.

I've noticed this for a while but this time especially, why are the auto-generated captions so good on Carla's videos? "stake steak for your life" perfectly transcribed 😂 in addition to an impressive percentage of Carla-isms. But on that note, to the team, would you consider moving the text inserts for ingredients to the top of the screen instead of the bottom (the default location for CC)? And I often feel like I need to turn up the volume on Carla's videos. Just FYI, and disclaimer that I'm not hearing impaired - I just like captions!

How long do you cook it for? How high is the heat? Do you lower the heat once you have a crust? How long do you butter baste? When is it done?

You use a thermometer not a time. Cook it to the temp range they showed on the screen then butter baste until it's the correct temp for medium rare 130-140F They show you all this info on the screen. You cook steaks using temp not time.

Awww that is so sweet. Quick question - the steak is allowed to come to room temperature before cooking, right? How long do people leave that out? I know this sounds crazy but I don't think I'm leaving mine out long enough before cooking, but I worry about it getting funky if I leave it out too long.

It depends on how thick it is. I usually get about 1" steaks and leave it out (in it's wrapping) for an hour. I think you'd have to leave it out for multiple hours for it to get funky. hth! happy steaking!

For what it's worth, the USDA says that perishable food (including meat and poultry) should be left at room temperature for no more than two hours (one hour if the ambient temperature is 90 degrees or above). However, J. Kenji Lopez-Alt over at Serious Eats has tested the claim (he calls it a myth) that a steak should be allowed to come to room temperature before cooking it. He found that after sitting in a 70-degree kitchen for two hours, the internal temperature of his 15-ounce steak, originally at 38 degrees, had climbed to only 49 degrees. When prepared side by side with another steak taken directly from the refrigerate, he concluded that resting a steak at room temperature before cooking "accomplishes nothing" in terms of flavor and texture.

Seen demo's for this technique and am surprised you didn't attract the myth warriors about cooking meat this way, unlike Mike G of Pro Home Cooks got last year. Too many saying things like never use thongs and squeeze the meat, never flip your steaks etc and one guy I got engaged in an heated discussion, finally had to call up Kenji Lopez Alt's 7 myths about cooking steak from Serious Eats to cut the discussion short. Once I did, never did hear back after that. 😁
