I love a nice pepper kick, but my husband is a total spice wimp so I have to save the chile flakes for garnishing my own plate rather than stirring them into a dish. When you put the towel over your face it reminded me that I did once just about kill us both by trying to toast dried peppers in my cast iron skillet. Wow, yeah, I'll never do that inside again!

Another great informative video from Refika and the crew I live in the northern interior of British Columbia we still have a few feet of snow on the ground as Refika explains this is not a problem for dehydrating your peppers I've been hanging my home grown peppers to dry just as shown for many years I will also pick up large amounts of peppers from the discount shelf in the grocery store wash them very well and hang to dry do not let your climate stop you from trying I currently have red bell peppers dehydrating due to the size i slice into strips to dehydrate racks thank you Refika

I forgot to wash my hands after making homemade red pepper flakes and touched my face last week. Since it was all I had, I used sour cream and rubbed it on the area like you would lotion. After rubbing it on and then washing it off about three times in a row, the pain went away. You can do the same thing with yogurt too. When all of this happened, I had a sinus infection with a stuffy nose, making it hard to breath. After those homemade pepper flakes, I could suddenly breath. Although I enjoyed finally being able to breath clearly, that is one mistake I won't make again.

Lovely! Must admit that I can't really take the heat of really spicy food anymore, but I like a bit of mild heat on some things & of course Çılbır is a big favourite in my home. I'm a huge fan of Urfa biber/isot pepper. I like the fruity, almost raisin like flavour & it's not too hot. The colour too! That deep crimson-magenta colour looks stunning sprinkled on top of eggs, yogurt & other dishes. Especially if served up in a tinned copper dish, the colours all play with each other & you get to eat twice as you eat with your eyes as well as your mouth. When the pandemic first hit, I was worried about not being able to get spices especially red pepper flakes because I use this so much when I cook. I picked up some dried red peppers, just in case, and put them in my freezer. I didn't know about adding a bit of oil and salt after you crush them, but I do now. Thank you!

You are a great cook, very charming and a beautiful lady. I love your smile. I'm learning about peppers, I'm from México 😂😂😂 yes, it's true. My only experience so far is with bell peppers lol but my taste buds changed and now I'm slowly dipping my toes into spicy foods. I cannot bite a raw pepper 🤣 it still surprises me when I see others do that. I'm getting started with dried peppers and sauces 9:28 aah, so that's how you "put off the fire inside" I hear a lot of people making jokes about getting hot twice, once when they eat the food and the 2nd time when in the bathroom 🚽 they don't know about ayran, but now I know 😎 awesome video, as usual!

Adding pepper to food is also good for when you are feeling sad or depressed. It can help lift your mood. Thank you for explaining so much. How do you wash your hands to get all of the capsaicin heat off. I use oil, soap, and water, but hours later, it's still there. 😊

Always enjoy your shows. The food from your culture is amazing, and surprisingly (or maybe not) is generally good for diabetics. Love the taste of summer it gives in the middle of rainy & chilly winters here on Vancouver Island. And I will be using many of your recipes this summer for entertaining. The food is always good...... My heart goes out to the people in your region of the planet right now. Such an immense tragedy to everyone who cares for human life and the lives of the pets who were also lost. It will take a long time to properly recover from this tragedy. Take good care.

I love growing spicy peppers and hanging them. They are so pretty. But I can't tolerate the heat of more than jalapeño poppers. And of course like all garden produce it all comes at once!🥴. So I make the jalapeño poppers by the dozens and freeze them on a cookie sheet them dump them into freeze ziploc to enjoy after the garden is over. I like your enthusiasm!

Iv been looking for red pepper flakes and couldn't find them. After seeing your video i realised the answer was all along in my pantry. I have a stack of dried peppers (paprika and hot chilli) which i can now turn into flakes. Love your videos and all the explanation that comes with it. Also, when i get hit with the chilli taste, milk also doesnt always work for me. Yoghurt works a bit. So sometimes i put a tsp of sugar on my tongue and let it dissolve. It has helped calm down the burn. Dont ask me the science behind it though 😆

Hello good people! How are you? 😊 When winter is over, there are still whole red dried peppers left. This is a good way to preserve them and use them longer. I recommend trying the red paper flakes with freshly baked bread and white cheese. Traditional and delitious 🌶️

Greetings, Refika! In New Mexico, not Arizona does the chile drying of red chiles on a string out in the sun. New Mexico is famous for its red and green Hatch Chile. I wish that you can one day visit my state. Many Hollywood actors have homes in our capital, Santa Fe, New Mexico (i.e. Julia Roberts and more). Love your videos and recipes!

Thanks for making this. I will try to do it too. I grew some red peppers last summer and dried them. But I don’t know how to use it. Can you make a dish showing what I can use a whole dried pepper with? In Afghan culture we add it to a dish called sholeh (sticky rice cooked with mung beans and the base is sautéed tomato & onion). Aside from sholeh (which I eat seldom) I was wondering if whole peppers can be rehydrated somehow to absorb more flavors to it in other dishes?

Sun drying, or solar drying, takes just enough moisture out of fruits and veggies to prevent them from spoiling while being stored. ☀️💛

Hey daniel.. make sure your town / city / village is not a humid one. If it's, fungi might grow on the peppers or whatever you want to dry. For example, humidity is really high in my hometown and it's impossible to dry anything. If the place you hang them sees the sun all day long, it might be different and they might dry out even though the weather is humid.

Keep them out of the fridge and make sure they are not all piled up together, there needs to be lots of air flowing between them. I do this all the time and I live in damp cold drizzly UK! My kitchen is quite hot though (I hang them in my kitchen) so maybe that helps - I don’t do it outside as it rains too much in UK!
