For the last 50 years, I have been allergic to paprika. Only after trying your recipe (because I've eaten red bell peppers before)I had no reaction THANK YOU! 😊 So I researched cinnamon too; because I've been allergic to it as well. Found out, I'm not allergic to one type: Saigon cinnamon. But it must be truly organic. Bless you for sharing your skills with us! I'm looking forward to making many of your dishes again with this paprika; instead of having to leave it out ❤.

*Thank you!* I've spoken with people who complain they have so many red bell peppers in their gardens and they don't know what to do with them. I always suggest they make paprika, and they're surprised that it's so easy! You can also dry out tomatoes to make "sun dried" tomatoes, then put the pieces into olive oil. They're SOOOOO much better than what you'd buy in the store.

Do you use all olive oil in jar to do or a mixture of something? I haven't found on Google yet what I am wanting to do, or shelf life or canning procedure.

@@RJ-mh1bu I'm sure you could make a very nice paprika with Jimmy Nardello peppers. But as for the tomatoes, I use olive oil when preserving and storing them. You want to cut them into quarters and take out some of the seeds, then dry them in a very low oven. Don't dry them all the way like you'd dry peppers for paprika. You want them to still be pliable. Then let them cool, put them into a glass jar and cover the tomatoes with olive oil. I sometimes stick a few sprigs of rosemary and thyme in there. DO NOT put garlic into the oil, as this can lead to food poisoning. You should store them in the refrigerator and try to use them within a few months, if possible. I have not experimented with long-term canning of sundried tomatoes.

I never knew where paprika came from up until about a year ago when there was a meme on Facebook. it was like, wow, who knew? I like the Spanish paprika, but use whatever I can find at the grocery store. Thanks to Rachel, we now know how to make our own. I wonder if you could freeze dry the bell peppers, with those freeze dryers in the market, it’s a possibility. Thanks Rachel.

I can make paprika whenever we have extra sweet red peppers, too. We use paprika a lot, and it’s always running out so quickly. Another option for storing spices like onion powder, chili powder, paprika m, etc... is to dehydrate a big batch (enough to fill a pint or half pint mason jar and then to vacuum seal the majority of the spice (with an oxygen absorber if you have them);and keep just enough out for pantry use that will be used up in ~ a month. This way, your spices are always fresh. I've been dehydrating and grinding my fresh spices like this for years!
