@@violet-fl9ve wagyu burgers are a thing, but not usually with that grade of wagyu (japanese a5). it’s not “wrong” to make a burger out of it bc it will for sure still be fucking delicious- but the fat content of a5 is so high that the burger kind of falls apart in the cooking process- and since the steak is so expensive for such a small portion it makes a lot more sense to get the full experience out of it by enjoying it as a steak rather than grinding it down to a consistency where you won’t be able to appreciate the tenderness or the rich fattiness of the steak since it will just feel like ground beef. it’s more of a cost efficiency thing when it comes down to it, because realistically pro chefs that cook with tht grade of wagyu will tell you not to put anything more than salt on it (not even pepper!) because it’s so expensive and so much time and care goes into breeding and raising the cattle that it’s almost “disrespecting” the meat to grind it up like that. but like i said, if you can afford it, do whatever tf you want to it, there’s no “wrong” way to eat wagyu and the only way you can truly mess it up is if you burn it down to a charcoal :)

One suggestion would be to have blended the A5 & the Ribeye together, like is commonly done with chuck and loin meats to get the blended meat ratio. Your patties blended would have been 40/60! 40% meat & 60% Fat 😋 maybe instead of caviar, next time use a seared foie gras! Great Episode!!!

I would have loved to see two separate burgers: a “sea” version and an “earth” version. I feel like the Kobe with truffles & smoked gouda would have been so earthy & warm & umami, while a burger made of the fattier A5 would offset the lean & briny crab & caviar.
