Making Flavorful Spaghetti alle Vongole
250g spaghetti (cooked al dente according to instructions)
1kg clams (washed)
cherry tomatoes (quartered)
3 cloves garlic (crushed)
1 tbsp parsley (dried or freshly chopped)
extra virgin olive oil
white wine
1. Prepare the spaghetti according to instructions. When pasta is about 5 minutes to finish, start the next steps quickly.
2. In a wide pan over high heat, add about 1-2 tbsp olive oil, and sauté the garlic for about a minutes. Add the cherry tomatoes and parsley then mix and stir for another minute.
3. Add the clams and give it a good stir and mix, then cover to cook for about 2-3 minutes. Add about 1/4 cup of white wine and stir for about a minute. Season with a pinch of salt and ground white pepper.
4. Add the pasta into the pan, and stir. Add more olive oil and parsley as needed.
