I used Nitro V stainless steel to make a japanese style Gyuto chef's knife/kitchen knife. The handles are white and black micarta with G10 liners made to resemble a yin yang pattern. For the pins I use 1/4" OD hollow stainless steel pins that I filled with white and black epoxy. I wouldn't call this knife a true gyuto japanese chef's knife, but merely my take on that style of knife. Next time I'll use thinner material as its a bit too heavy.

Fun cultural fact: In the traditional Ainu culture of Japan, if a woman accepts a hand crafted knife from a suitor it's considered an accepted proposal. Cultural facts aside, wonderful job on the finished knife and fantastic video. I love the movie refrence you slipped in. Made me say " Oh Brother" that's a good one. ;)

The Gyuto is the Japanese equivalent of a European, all-purpose chef knife. This knife is great for completing various tasks, such as filleting protein and cutting and chopping fruits and vegetables at home in the kitchen The gyuto is a Japanese designed chef’s knife. Gyutos vary widely in design but generally range from 210mm to 270mm in length though smaller and larger examples can be found

Beautiful knife. You started with some pretty thick looking steel, on camera it looks close to 4mm. Great job none the less 👍👊

What grit were you using for grinding the initial bevels? I have a hard time believing that it took you 5 hours to grind your bevels. I know that it was hardened but even then it shouldn't take you much longer than an hour or an hour and a half.

Not sure if this is a good idea but hydro dipping the handle might give it a pretty good look with the yin-yang symbol on top

Have you tried back filling the steel pouch with argon before heat-treating the knife?

When heat treating stainless put a small piece of paper or paper towel to burn off the little oxygen there is in the puch way before the knife gets to any temot that can mess with the carbon content FYI

You can rough grind the bevels in pre heat treat. Just leave a dime sized edge and you should be fine..cool knife just the same.

You could have ground the bevels in before heat treat and then you’d only have to do some finishing and sharpening after heat treat haha

Beautiful but looks very heavy and 5 hors grinding wow! Would you have chosen a thiner piece of Steel to start with if you were redoing it? Also, please bolt that Grinder to the Bench before you lose an eye

Tried to order a thinner piece of nitro v but it was back ordered. Decided to roll with what I had. It’s definitely heavier than a traditional chefs knife.

Just wondering why you think the bevel grinding needs to be done after heat treatment. You can do it in that order but it's not a requirement. Bevels can be done before heat treating. You will save a lot of grinding belts. Anyway just curious. I really like the fact that you narrate and didnt just play music.

A lot of stainless steels used for knifemaking are very prone to warping if heat treated to thin.

Very good job, but it's way too thick blade for a kitchen knife from this type, it's just gets too heavy, and the cutting performance is seriously effected by the thickness, i recommend you to try 3 mm blade thickness with a full flat grinded bevels to about 0.3 mm at the cutting edge, you're gonna see and feel the difference between the weight and the cutting performance, i promise ! Keep up the nice work! ✌

I brought a chef knife $10 Pretty sharp. Plastic handle. Works good. Then i brought l from dollar store Where the handle n blade meet is weak. Needs epoxy. I didnt. Pretty sharp. But thats cuz i dunno how to make one. Nice job
