props for trying. Ding Tai Fung chefs take any where from 3-6 months of practice to get good. To truly master the perfect pleat, it takes over 2 years.

I LOVE THIS FORMAT. Maybe try traditional Italian Carbonara with no cheats or hacks next? Most of the ingredients can be portioned in advance for easier production.

Traditional italian carbonara isn't very hard and it doesn't take very much practice, your pan just can't be very hot at all and most people are super impatient

im a trained potter. pulling handles on mugs is something quite similar to folding dumplings i think as you have to be really careful and meticulous. one pull too much will brake everything and one too less will give you a handle that is too thick. my master always told me you get an idea of control when you pulled 4000 handles on a cup. she was right. after a few thousand repetitions you get a feeling for it :)

I love your hutzpah to take on these challenges. It would also be cool to highlight the regional US chefs (maybe around the world) & try to recreate their dishes. I don’t think that it is over played to your audience. There is so much cultural significance in food. I think that the Mythical team could create a bridge through food that would show that there is so much more that brings us together than divides us. The references could be from top chefs as well (a la Top Jaw). Just a thought…
