I couldn't wait to make this vegan steak video!! Getting the texture and taste of a cut of vegan steak just right has proved fairly difficult, which is why you see so many plant based companies searching for the best options out there!! But what if that option is already made! I've used the lions mane mushroom before for loads of different recipes! They are so versatile in texture and taste! But it wasn't until I started working on them in their whole form that I discovered their texture! They have a grain and structure through them that wildly has a similar texture to meat!! If you can get the flavor right, then you have yourselves a perfect and simple vegan steak!!

Another great recipe! I still can’t decide if I’m more impressed when you combine additives to make your own “meat” from scratch or by how well certain plants and mushrooms simulate meat like in this one. Awesome!

Thank you!!! I always love when nature does it! Its pretty wild. This one is a neat discovery because lions main fresh doesn't have as defined of a meat texture as when its dried! I messed around with fresh lions manes for a while and never really thought of them as steak like or meat like... I always used them torn apart or broken up into "crab" like pieces.

@@nic8671 I’ve grown lion’s mane and cooked with them and ime they can be cooked to resemble steak. Maybe you weren’t following Mark’s instructions. If you cook them like a mushroom then that’s what you’ll get.

I'm so glad you did this! I picked a lion's mane last fall, but I didn't know what to do with it. Also, the thing people don't realize is how dehydrating the mushrooms first gives them a much meatier texture. It's really cool! I've been doing this with chopped bellas, that come out like stew tips or little steak bites. I love it!

Thank you!!! That sounds awesome. I think it would work really well in just about any dish with steak... I believe they would even stand on their own. But yes peppery and spicy would be awesome with these!

My family decided to have steak tonight (they’re not vegan), so I decided to make this today. I ran around town all day to get all the ingredients. Discovered lion’s mane mushrooms are also called monkey head mushrooms (as well as a bunch of other names). Found them at an Asian market. Had to use shiitake mushroom powder and a little salt instead of the mushroom extract seasoning (If it’s the one listed on Amazon, it’s mushroom powder, salt, and mushroom extract). [edit- the mushroom seasoning suggests using it instead of MSG, so maybe you could use MSG instead of mushroom seasoning]. Found a very large bag of beet root powder and the blackstrap molasses at Sprouts. For the cooking: the mushrooms did not soak up as much liquid as I expected, I didn’t need to add much water over time, if at all. I cooked them between medium and medium high on a gas stove. Taste: definitely a meaty taste, probably too much apple cider vinegar though. Maybe it was just my mushrooms, or maybe I needed to soak longer, but they were pretty chewy. Overall though, pretty good and very filling. I ate two. Not fooling anyone, but it definitely has a steak taste. Final thoughts: if I were to make this again, I would probably use less apple cider vinegar and soak longer (Edit: it may have been that I soaked it too long or at too high a temperature. My guess is that I actually cooked it too much in the water)

I bought a Lion’s Mane kit to grow my own mushrooms after watching this video and the crab cake one. It’s almost harvesting time and I just now found your comment about dried Lion’s Mane having a much more meat like texture. I’m not sure if I want to dry them or not. One of my ideas was to use a shredded mushroom as ‘crab’ in a sushi roll. I’ll let you know if I use them as a faux burger. All I know is that atm I’m salivating and hungry. Can’t wait!

Just made this from the recipe in the cookbook, once I finally found some dried lion's mane mushrooms, and grilled 'em on the BBQ. The texture and flavor were AWESOME. The only caveat I had was that they came out very salty. Next time I think I'd cut down on either the bullion powder or soy sauce.

Very interesting. I'm growing LM now, and most of the pro chef (ATK etc) cooking methods for mushrooms in general describe that you should first cook them without oil (just dry, or even with water) and break down the chitin to reduce the sponge like ability of mushrooms -- AND THEN you add a tiny amount of oil and you can brown them / sear them / fry them etc. (If you've ever tried cooking mushies and noticed every time you put oil in the pan they just drink it up... this fixes that). I appreciate the money shot at 6:23 to see how it came out, you can almost see the outer edge where you did get the moisture out (and the outside crust proves it), yet they are steaming and look very moist inside. Mine won't be dehydrated but I will probably incorporate some of your ideas/flavors here. Thanks!

OMG, it is the first time since I've been plant based that I had something stuck in my teeth. The flavor was great. I added a teaspoon of espresso powder. Wondering now how I can tenderize it. It was exactly like a tough cut of steak. Love your videos!

Fantastic! Could you try a beet steak recipe? At a high end vegan restaurant I had a inch think, round slice of beet which had been marinated in a umami flavor with mushroom power, was then breaded in sesame batter and fried. It was amazing - like chicken fried steak.

Ok, I have to get me some of these mushrooms. I was fortunately to stumble on a large outcropping of chicken of the woods fungus this past summer and I have a bunch in the freezer. Great that you as a chef let yourself inspire! There are so much fun you can do as a chef to make good vegan food! Ever since I went plant based soon 7 years ago, I have experimented with all sorts of things, especially in the beginning I just had to, as there were barely any alternatives in the stores in my home town in Norway. All I could get to replace meat, was a frozen, ready cooked mince (not shapeable) and a vegetarian (not vegan) «chik’un» fillet. That forced me to find ways to get by and I soon discovered that plant based cooking is both challenging and a lot of fun. You can make so much delicious food and as a chef, you have the option of really making people happy with your cooking! 👏👏👏👏💚🌱🧩🔋✅🤗

I’m pretty sure you’ll need to dehydrate then rehydrate to get the texture right.

Those look AMAZING! Is the beetroot powder only for color or also for flavor? Do you think you could leave it out? Also how necessary is the mushroom extract? I'm not sure I could get a hold of that easily.

He has a video on how to make the mushroom extract and you could also take a short cut version by buying DRIED mushrooms that you like the flavor of and put into a nutri bullet or blender or something to turn it into a powder. I have been wanting to make his mushroom extract to see the difference but haven't done so yet. You can buy dried mushrooms by googling them online or can dehydrate some store bought fresh mushrooms in a dehydrator or the oven on the lowest setting to make the mushroom powder or extract.

What is that other mushroom the guy in England uses to make steak? He works with one of the grocery stores over there, I think. It has lots of layers, I think. I have only seen the video twice, and I haven't been able to find it.

You can absolutely do this with fresh lion's mane mushrooms, if you have a dehydrator.
