it's very interesting. those are same culture in North-East Asia but those has different thing. it of Tiwan use crushed peanut, but it of Korea use soybean powder. i feel funny of same but difference as it.

I'm guessing the malt grass has an amylase enzyme that breaks down the rice starch to mostly glucose?

Sometimes I wonder...how the heck did ancient humans come up with this? Was it dumb luck? Generations of careful experimentation, trying each and every plant in every possible permutation they could dream up, and seeing what worked? It really is mind-boggling when you think about it.

Typically, desperation. Either famine caused people to figure out how to use what was available but was previously inedible, or something happened to their stockpile and they had to use it anyway
