In this quick video, I show you how to make a gluten free, low carb, nutrient dense flour substitute from Zucchini! It's very easy to do and will last for years with no refrigeration or canning needed.

I got a freeze dryer with the idea to make zucchini flour for baking or for smoothies. Got super busy growing a garden this summer and haven't even started using the freeze dryer yet. Thank you for your great contents. I've enjoyed every one of your videos.

I can imagine the incredible taste of say.. salmon patties made with zucchini flour, as opposed to flour and cornmeal. 🤤

Wonderful idea & I have a freeze-dryer that would do it perfectly! I knew of adding fresh zucchini to bread recipes but didn't think of flour. Thanks so much!

I love you you are fantastic and amazing. I was diagnosed with type 2 diabetes last year. so I can't have wheat flour have been buying coconut flour and buying almond flour this is fantastic. Thank you so much.

Thank you for the video. I just found you on youtube and I too am in Louisiana and I would appreciate more specifics about "air" drying the zucchini. I have grown zucchini and normally can it but I would like to try the flour.

Get a drying mesh bag and hang it in the heat where it won’t get wet for about a week

I would think freeze drying would be even better if you have a freeze dryer.

So, you still have to use part wheat flour??? You can’t use ALL Zucchini flour?

You an use all zucchini if you use a coconut flour recipe… if you use a wheat flour recipe you can only replace 1/3 of the flour with zucchini

Unless you have the details on how to add gluten to wheat substitutes, because that is the missing element.
