In cold countries if idly or dosa batter and even for curd if placed on the radiator it will get fermented easier than waiting for 2 or 3 days

I made Ragi and Kambu idli batter. Within 5 hours they fermented. I mixed it well and kept in the refrigerator. It continues to ferment and I have to clear the mess every few hours. How to prevent this fermentation?
