theory. The lamb is actually the first alternate. We see the lamb has died and Gabriel brings it back but the shepherd keeps saying it's acting weirdly or different. Then in the scene at the farmer's house, the lamb changes and disfigured. Maybe the first alternates took a while to posses the body of the thing they killed, or maybe Gabriel was waiting for the right moment to create it.
