Mansaf is a traditional Jordanian dish made of lamb cooked in a sauce of fermented dried yogurt (Jameed) and is served with rice.

Lol this is awesome but slightly off from the original thing! You never brown the meat! That is French cuisine! You don’t add turmeric, you add Jordanian ghee which contains turmeric and traces of other spices (cardamom, cinnamon, …). Simply boil the meat in water that covers the meat and with one large white onion quartered, 1-2 bay leaves, and optionally (a small cinnamon stick, 3-4 cardamom pods). Boil until tender almost fall of the bones; for at least an hour on medium to medium high heat. (We usually boil the meat in water only for couple rolling boils then dump the water and the scum to make cleaner broth in color and flavor) No need to strain the jammed m; Wash the jameed outer salt layer, break it into pieces, add hot water to cover; almost boiling, rest it for 10 minutes to soften, and blend it with the soaking water until liquified with no grainy bits(you soak overnight if you don’t have a blender and will use your hands to rub it into liquid again). Assembly: mix jameed and meat broth gradually while tasting at ever step, once it’s to your desired flavor add one extra cup of broth and add the meat. Let it simmer uncovered for at least another 30 minutes or a max of 4 hours (make sure to add water when ever the water level drops), finally top it up with Jordanian Ghee and serve it with rice and garnish with fried peanuts or fried slivered almonds, and finely chopped parsley.

Please don't substitute it with chicken, and yes it has been substituted with chicken and beef and some people do enjoy the chicken, you can do beef but for the love of god don't do chicken that's simply blasphemous towards a traditional dish such as Mansaf.
