Runza Casserole
2 pounds Ground beef
1 med onion
salt, pepper, garlic
bell pepper opt.
4 cups shredded cabbage
2 cups mozzarella
2 tunbes Cresent rolls
350 30 minutes or till golden brown, cook bottom crust first for 5 minutes before adding filling

Oh, there is a homie quality. I live in AR and feel like she is my adopted momma, where mine cooked on high. I told hubby today I was disappointed when I ran out of deer steak and tuna fritters with cranberry this week, then thought.. oh.. I had sausage balls in the freezer. Deer down soft tacos tonight. And home grown lettuce. Interesting facts from pop. I miss that area. The mini farm us keeping me south so I haven't been up there in years. God bless everybody. I'll try this one soon since VA wants to put him on diabetes meds. Good way to sneak in the veggie. 😂

I’m a new subscriber. I believe god puts people in your life for a reason. I had been missing my grandma and grandpa when I came across your channel. They were god fearing folks and lived like the two of you. I spent many summers staying with them on their farm. I myself don’t have a farm, but a good size of land. I am going back to my roots. Reading my bible and living off the land. God gives us all the seeds we need. It brings me such joy watching your videos. Mr. Brown, I make your skillet bread every Sunday morning. My husband loves it. God bless you both.

I am so happy for you Mrs.Lori that you still have your husband after all these years. I had my husband for 43 years but he died before we had a chance to enjoy retirement life together. My husband was around the size of Mr. Brown, and he was the best to sleep with, so warm in the winter. Now my elderly cat sleeps with me, and I’m thankful she’s still living. ❤

So many divorce early today and never get to find the love and comfort of long term companionship! Fortunately my husband of 49 years is still with me, but just reading your post brought tears to my eyes thinking about him going first! You are so brave!

I’m 77 and grew up on Runza yes you said it just exactly right! It’s such a simple dish but an unusual and wonderful taste. We used just cabbage and hamburger and always had them when mama made bread for the week. Roll out dough thinish, fill, crimp, bake and enjoy. They were delicious at room temperature for lunches or Served hot with brown gravy over the top for an entrée. So they were kind of like a sandwich, but at some point , like maybe the 70s, Runza restaurants, where they served them On a bun. They were good, but couldn’t touch the authentic ones! Thanks for this wonderful casserole, and all the mini recipes and tux. You’ve blessed us with!❤

The original Runza’s from the original Runza restaurant were wonderful! I think the filling mixture may still be the same, but the texture isn’t as much-probably due to having to manufacture in a larger basis. Still tasty.

@@cherylyoder7956 By “original“ I meant homemade ones, the ones mama made, and those that I helped grandma make to take out to the hired men during harvest. I guess to me it was like the difference between a really good juicy, perfectly cooked homemade hamburger and a fast food hamburger. But in fairness, I have to say though I was raised in Nebraska. I left home before the fast food, restaurants I only had them rarely when traveling through the state, And though a taste of home, always a disappointment and the thought, “surely they could do better than this, after all, it’s a RUNZA!” 🩷

I don't care for runzas from the restaurant at all. Soggy and slightly sour. I love some hamburger and fried cabbage though!

My great grandparents immigrated from eastern Europe - Poland and Russia in the 1910s. This along with so many dishes involving cabbage were a staple of my childhood. Love it!

I worked in a bakery in the early 80’s. They would make Runzas for the Renaissance Festival that is held in October in Plantersville, TX. The filling was the same as what you made but 1/2 cup portion was wrapped in yeast dough and baked till dough was browned, about 30 minutes. They were very popular and tasty!

Yes. Runza in Nebraska and Bierocks in Kansas. We love them and you are right on. We add lots of pepper and caraway seeds to ours. And yes, we do shred the cabbage. We don’t put them on bread, but make dough we wrap them in and bake them. We have fun we both of you.

That is how we always made it too. When they sold msg that was in the recipe too. The bread dough is really rolled thin when making each bierock.

@@kimlawrence8655 amazing about the msg. We never used it because it made my mother so sick. The first time I ate a Bierock was in Great Bend Kansas in 1979. One bite, and I was hooked. We still make them and eat them regularly. I try to keep a bag of the in the freezer for quick lunches.

My Mama used to warm flour tortillas in a skillet and put this filling in it and called it Bierocks. She made it when we were moving a lot. She would have packed the kitchen up and just had a skillet left out.

I live in the Sierras of Northern California. I have learned that you have to wait until the earth is warm when you put your hands into it, before planting. I learned the hard way, planting my veggies way too early. Now I wait until Mother’s Day to plant. It’s my gift to myself.

I have been planning on starting my seeds soon, so I can transplant by May but Mothers’ Day is a good idea. It’s hard to wait when the weather starts turning warmer.

I’m in the Sierras too. My neighbor built a greenhouse which then got too hot so she had to figure out an electric vent or something. Ravens have really moved into the area but I’m determined to win. ☺️

My grandma, born in 1901, German heritage, used to make a sauerkraut ranza. It consisted of sauerkraut and ham. She put the filling in bread dough. They were hand-held treats.

Interesting take on Runzas. Runzas are actually named after a restaurant that serves a variety of tem primarily in Nebraska. They are a copy of Bierocks. It’s not a sandwich between two pieces of bread. It’s a cabbage, onion and hamburger filling enveloped inside yeast dough and baked. They are fantastic, freeze well and are a wonderful, filling meal.

So good to see you both. I haven’t ever heard of that sandwich, but sounds tasty. I love cabbage, but my husband Jerry probably wouldn’t eat it if he knew it had cabbage in it. We’ve been married 54 years and years ago after we were first married I made Stuffed Eggplant and he ate it, and liked it, because he didn’t know what it was. Before we married he didn’t eat many veggies but corn and potatoes. Now he eats a lot of veggies and loves salad. So glad you’re feeling better Lori. ❤️🤟✝️🙏

When making angel food cakes at the very last, you can lightly stir in a tablespoon of decorating candy sprinkles. The cake will come out tasting the same, but have a confetti appearance. So fun for special occasions.

So happy to see you two! And it’s really good to see Mr Brown helping! That’s kinda rare bc he’s always working outside! It was in the low 40’s here in north Louisiana last night, 60’s today. We got about 3 inches of rain yesterday. Sometimes really heavy but no tornadoes here. Thank you Lord! I’ve never heard of runza casserole or sandwich but I sure think I would like it. Another channel made the sandwich and used sauerkraut in their recipe which I bet is really good.

I agree with you, green bean casserole and tuna noodle casserole are two items I do not eat. But brunsweger, I know I misspelled it, but it’s one of my favorites, slather mustard and onions and that delicious liver pate and yum. I really enjoy watching the two of you, and you’ve introduced me to foods/meals I’d heard of but have not eaten and I’m so thankful. 😊

How to get a fly 1st time every time 😀...flies can see in every direction except straight up. Move fly swatter in slow and always swat from the top. You will get them every time. Love your channel

I'm so happy you are better Ms Lori. You are much too sweet to be sick. I enjoy your channel so much. You were talking about putting out your garden. My Daddy who was a very wise, hard working man always said that your garden would not grow until the ground got warm. I used to love to get out and plant flowers. I had so many beautiful flowers all around my house but I can no longer get out and work in them. I have to accept that my days of doing that is over. God bless you sweet lady and Mr. Brown.❤

I had no idea what a Runza or Bieroch (beer-rock) was until I moved to Northwest Kansas to teach school in 1985. During my first week, one of our lunches was Bierochs and I had to inquire what we were going to be served. My neighbor, who was one of the cooks, described to me how they originated with the original German settlers in the area and as a pocket sandwich (sealed in a pocket of yeast bread, baked until golden brown) they were convenient to carry to the field for the workers and were easy to eat as well. I was sold on them after that first meal, and asked her for her recipe and have been making them periodically, at home, ever since. The one short cut that she taught me was to use Sauerkraut (drain, rinse and wring dry) rather than cabbage -- the taste is a bit different, but I found that I liked it better. I learned the casserole shortcut only mine used packaged pizza crust rather than crescent rolls much later -- prior to that my shortcut was to purchase a frozen loaf of raw bread, defrost it, roll it out and proceed as I would when I made my scratch yeast bread. They were served with the typical hamburger condiments when they were on the menu at our school. When I made them at home, I learned that the pocket sandwich type would freeze well and heat up in the microwave quite well (I never tried freezing the casserole version).

I had a Runza sandwich from a food truck in Stapleton NE, at the fairgrounds in 2017 watching the eclipse. You are pronouncing right Miss Lori. I enjoyed the sandwich. Love hearing the rain when you are cooking.

My Mother-in-law, from Nebraska, made what she called Kraut Runzas. The filling was similar, except sauerkraut was used. Large Rhodes Dinner Rolls were rolled into disks, the filling was added and the dough was folded around the filling, shaped like a roll, crimped on the bottom and baked. Good hot or cold.
