FUKUOKA, Japan - Fukuoka is one of the capitals of Japanese ramen, especially what’s known as Tonkotsu Ramen, or locally as Hakata Ramen. One of the most famous global ramen chains originating in Fukuoka is Ichiran, and today we are going to go eat at the original, the headquarters!

Along with serving Hakata style Fukuoka ramen, there are some very unique things about eating at Ichiran. First is that they have a full checklist system where you can decide and customize your bowl to your liking - everything from how rich the broth will be to how chewy the noodles will be and the spice level you’d like, plus additional topping and additions.
Next, Ichiran Ramen is famous for their dining room style where you have your own personal ramen booth so you can eat and enjoy your bowl of ramen all by yourself without any distractions. It’s a pretty cool concept if you’re eating alone especially.
It was my first time trying Ichiran, and while it may not be the best bowl of tonkotsu ramen you’ll eat when you’re in Fukuoka, it’s definitely tasty, and an amazing experience to eat at the original flagship Ichiran location - a must eat when you’re in Fukuoka!

That is EXACTLY how I like my eggs cooked. They should be yolk just barely set and creamy- NOT hard and NOT runny. With a perfectly balanced broth.... Yummy... Something in my Jewish heart MUST be part Asian.

I am Japanese. There are three type traditional noodles, Ramen, Udon, Soba in Japan. Especially, you can not see same Ramen in shops and Japan. Smell, taste and type of noodle is different between Ramen shops at all. Price is generally 3 - 12 dollars. Please try to look for your favorite Ramen in Japan without guide books. On the other hand, Udon and Soba are not seen in Ramen shops, so you should go to a soba or Udon specialty shop or general restaurant. Both are not expensive, 2 -10 dollars.

What I like about this restaurant in general is its modified & designed specifically for ramen lovers. The fact that the menu is basic & simple making ordering easy as possible for customers is genuinely calibrating the time factor. Also, the individual private booths helps diners feel more relaxed & focus on enjoying their dish exclusively. The service in Japan is very-well balanced allowing customers to experience each moment efficiently & satisfying. Thanks again Mark for another addition to your culinary legacy. @12:04 if you want to have a boiled egg like that, start out in cold water pan, have it heat up with the egg to boiling point, and from the boiling point it takes exactly 3 minutes 51 seconds, put under cold water right away and you will have a oozy yoke. medium sized eggs.

Nice clip, Mark, from Ichiran in Nakasu, Fukuoka. I used to live for years in a building just next to it. Ate quite a lot of bowls of ramen. They also have a section with normal tables. At the back of the building it smells weird from the 24 hour boiling of bones ;-))

Hi Mark, the level 10 spicy is manageable. The ramen ccmes with an onsen-boiled egg, if the egg can't peel well, you can have replaced FOC. Itadakimas ! : )

We have a couple of locations here in NYC and they're quite popular. I loved going since for me, it's all about the ramen. No nonsense, no apps, no talking, just ramen. In and out in 15-20 minutes.

@@trinityworker74 For the most part, I agree with you. Food is meant to be communal. But this is somewhat unique since it's ramen. Think about it, you've got delicately made noodles sitting in boiling hot broth. Every minute that you're not eating, that noodle is just going to get more and more soft and overdone and the broth is just going to get colder and colder. It's meant to be eaten immediately, without haste. This is the norm for ramen eating in Japan. If you go to an izakaya, completely different story. Of course, take your time, enjoy lots of drinks and laughs, and spend all night there. Ramen is it's own beast.

From what I've read, the booth idea for the founder of Ichiran was all about slurping. Apparently he thought that women were embarrassed to do it in public. Thus the booth idea. It makes sense since Japanese women don't even like to laugh when anyone can see their open mouths.

Generally, Hakata ramen uses thin noodles because it grabs the broth better. This tends to make the noodles go soggy quickly, so the amount of noodles in one serving is normally less than a normal bowl of ramen. Hence one would be better off to order firm noodles, as it will not go soggy quickly, and you are pretty much expected to place an order of extra noodles to get enough noodles for your meal.

When visiting Kyoto on a bus tour, we finally had free time in Kyoto. Blissfully, the internet allowed me to find Ichiran just off Nishiki market. Even as a western rube, I could figure out the vending machine, although an English speaking employee showed up outside just as I was finishing the order. The ramen was the best I've ever had. The most challenging aspect was the questionnaire asking how I liked my firm I wanted my noodle and how much spicy red sauce I wanted, etc. As a rube, I just checked everything down the middle. I wasn't disappointed. The booth thing was just amusing, not needed.

Hi! I love your channel and subscribe to it. I've had ramen at Ichinran in New York. Oh, many people were on the line in the shop! You should try motsunabe, giblet hotpot in Fukuoka. There are a lot of booth restaurants called yatai on streets. I stayed at Miyako Hotel in Fukuoka and swam in the rooftop pool in winter.

Ichiran is very good, but I also found Tenkaippin to be on the same level or even better. The broth is even richer, what I do like from Ichiran is the customization of your ramen.
