Can't say why others love his videos but for me it is his vibe and decency. He not only tastes every food with love but also with much interest and respect. He is such a genuine person that I can never get tired of his videos or the way he is so on point giving every little detail of food.

What really makes yatai so special is the niche it fills in Japanese food culture. That of street food, cooked fresh, on the sidewalk...as its done, say, in Saigon or Bangkok. You could probably get the same food or things similar to it at actual brick and mortar restaurants in Fukuoka; but, there is something so charming about getting them at one of the sidewalk stalls. And, those vendors work so hard. The entire structure, the cooking apparatus...everything has to be erected before service begins. Then, the owner/chef buzzes around merrily to serve his or her eager customers once they flood in. Japan needs to preserve this culture.

For his reference 6:01 Japanese mustard, "karashi." stronger than Western mustard. 6:52 ”Yuzu kosho," made from chili and yuzu peel, etc. 8:48 "Mentaiko," spicy cod roe. 11:15 "Benishouga," ginger pickled in vinegar with umeboshi, so it's red. 12:37 it's more like Ten-Ichi. This "Ten" and tempura has a same kanji. 13:55 ”Daikon oroshi," grated Japanese radish. It may be slightly tangy. 15:15 green pepper 23:06 Strange enough but what he says "hot dog" is called "frank(furter)." 24:21 "Tsukune." You can take it as a chicken meatball but eggs are used, and tsukune has fish version.

I've been watching Mark for a while now. He taught me that the best way to truly connect with another culture is to ENJOY their food, not just try it. That's easier said than done. What Mark is doing is something I have never seen anyone do before. He truly connected and lived with people of all cultures in ways few people can. When he tries new dishes and cuisines, he tries his best to indulge in them the same exact way the locals do. And you can easily tell that he really loves it! Love you Mark!

• Fukuoka is the capital of Japanese street food in Japan • The yatai stalls set up every day at around 6 PM • Mark visits five different yatai stalls, each specializing in a different dish • He tries the original yaki ramen, which is a signature dish at the first yatai • He enjoys the omelette made with menta (spicy fish roe) at the second yatai • The third yatai is famous for its tempura, including shrimp, eggplant, fish, and peppers • The fourth yatai specializes in Hakata-style ramen with thick pork bone soup • The fifth and final yatai serves yakitori (grilled chicken skewers) and pig organ soup • Mark enjoys the delicious food, the friendly people, and the traditional yatai culture in Fukuoka

He shoves the noodles into his mouth and doesn't care how long his noodles are or how much he has to consume to get the FULL Flavor. FANTASIC! His LAST stall was Amazing. Yakitori is one of my favorite dishes in other parts of the world....not often but available...YUMMY!

Hi Mark, Welcome to Japan! (I have never been to Hakata though) I think the citrus pepper condiment you ate at the first Yatai is "Yuzukosho". Fresh green chilies fermented with salt along with Yuzu. I love to put it in Udon. You can use it cooking all around. I highly recommend! (You can buy them at supermarket. Fundokin brand is great, also maybe there are regional brands.
