Grand-Béréby, Côte d’Ivoire (Ivory Coast) - Today we’re still on the coast of West Africa in Côte d’Ivoire where we’re going to see the entire process, cooking and eating, one of the best West African foods; palm nut soup.
Palm Nut Soup (known locally as Sauce Graine) is one of the great West African foods, but there are many ways to make it. In Grand-Béréby we met up with Léon who is part of the Krumen tribe. In this coastal area they make palm nut soup with the nuts of the African oil palm, and the heart of the same palm tree. The first step was to harvest all the ingredients, and it was also a huge education on where the ingredients came from and the work it takes to harvest them.
The palm nut soup was made with the boiled palm nuts, pounded into an soup and oil, and then boiled with a huge variety of local seafood, and the fresh heart of palm chopped into small pieces. They also added in tons of fresh chiles and a huge amount of dried chilies to make it extremely spicy.
Before eating we were greeted by a representative of the Chief of the village to customarily greeted us with a kola nut, chili, and a drink of local distilled sugarcane.
The palm nut soup was one of the best dishes I’ve eaten in West Africa, truly a complex magical flavor and combination of ingredients. It was a once in a lifetime food experience. And truly the amount of work it took to prepare made me even appreciate it more.

Ivory Coast is dominated by akans, when the border was created, some akans were stuck in Ivory Coast, they have the highest population in Ivory Coast, they speak bole/twi

Yes we do have akans in Ivory Coast but it doesn’t mean they represent us all, & remember before colonization there was no Ivory Coast nor Ghana. Meaning, we were all connected. So, you can’t say the Akans are ghanains since there was no Ghana or Ivory Coast back then☺️.

That's because for his channel they always make special dishes. Unfortunately a lot of restaurant or people he goes only make certain dishes only for him. I have a family memeber who visited one of those and thet said they only made it specifically for Mark Wiens.

I am a pretty good cook. I make pasta, soups, and stews from stratch... but, I don't go to the forest to get my ingredients. This is an all day process. What a chance to live in nature, cook, eat together in a dream setting, we in northern Europe we live between 4 walls surrounded by machines and screens almost in the dark it's sad. The part where the gentleman feeds the monkeys and just moving and magical are singing amazed me, what a wonderful person . Omg, I’m laying here in a hospital bed watching Mark and dreaming of being with him and the gentleman who was feeding the monkeys brought a tear to my eyes. It’s absolutely beautiful how those monkeys love him and show respect. I’m so glad that he is an advocate for them. That was one of those moments that is held in time. Thank you, Mark for sharing not only those special moments but how they gathered the ingredients and the techniques that they used and the food that they shared. It’s a truly special blessing

I see a simile of the heart of the palm to Mark's videos. The hosts laboured to get to the heart of the palm to savour the sweet center. They cooked and served it to their highly valued visitors anticipating their return. Likewise, Mark's labour over the years has served us our heart's desires( food, culture, communities, travel, tourism) making the army of 10 million keep returning for yet another dose of the anticipated treat!

As a child my parents and I traveled all over the world. Those memories and adventures are something that I hold near and dear to my heart. He could not help with the heart of palm-did you not hear the significance of the plant towards the GUEST? He is helping them with money that he paid to be there and have the experience as well as the promotion of the village and guide. Listen to the GUIDE, and put your personal nature aside. Something as small as the thumbs up you kept seeing could get you in trouble in another country. Listen to YOUR GUIDE!!!!

Thanks, Mark, for taking us with you to a place that most people will never be able to afford to visit. The palm is well known throughout the tropical regions of the world, but this dish is truly special and unique. I found it intriguing that the palm nuts, when pounded, gave a liquid that was reminiscent of curry! And then the added peppers and chilis would bring a flavour similar to a curry. I think that the use of the banana leaves around food and, here, at the bottom of pots is something from the African cultures and comes to us in the Caribbean also: e.g., Conkie in Barbados; Paymie and pastelles in Trinidad; Dukunnah in the Eastern Caribbean.....they impart a unique flavour but also effectively replace processed oils and added fats, transforming it into a very health kind of cooking. No frying!

The fruit itself is medicinal. The nut when broken, is used to make a medicinal oil called kernel oil. It’s usually black in color, can be used to for a lot of things and even cure a lot of sicknesses back in the days and even now. I love Africa. I am African 💪

Really enjoying this Ivory Coast series! As a foodies, it's always amazing to find out something new to eat or some new combination like the palm heart in palm nut soup. Blown away by the barbecue varieties/techniques in the first video, as well as the previous fish dishes. Would have been nice to understand the white traditional facial markings on the women too. 👏🏾👏🏾👏🏾🤩🌟
