MAE HONG SON (แม่ฮ่องสอน), THAILAND - Welcome to Mae Hong Son province in northern Thailand, one of the most relaxed and beautiful provinces in Thailand. I love the mountains, and the mix of cultures that are represented in Mae Hong Son. During our trip, we had a chance to stay at a home-stay (โฮมสเตย์ป้าคำหลู่บ้านโบราณร้อยปี) in a village called Ban Muang Pon. The village is home to a Shan, or a Thai Yai (ไทใหญ่) community. Along with a few spectacular Shan food meals, one day some of the expert cooking Aunty’s from the community cooked 50 kilos of Gaeng Hang Lay (แกงฮังเล), a Burmese pork curry!
As the story goes, Gaeng Hang Lay (แกงฮังเล) is a strong pork curry that originated in Burma, with the help of Indian curry spices. The Shan people are the ones who brought the dish to Thailand, and now you’ll find Gaeng Hang Lay (แกงฮังเล) as one of the most common and popular dishes in Northern Thai food. The original version of this Burmese pork curry that the Shan make in this village is still made on special occasions, and for big communal gathering like a wedding or celebration.
We woke up early in the morning to get started, and some of the Aunty’s from the community had already gathered to start the cooking process. First they chopped up the pork, peeled potatoes, shallots, garlic, and ginger.
The pork was braised down in a curry paste of chilies, lemongrass, shallots, garlic, and ginger, and cooked in its own juices and melted fat. It’s important to note that there’s not written recipe for this dish - it’s just passed down by knowledge, judged by ratios in the head cooks head, and by experience. They added in dark soy sauce, tamarind, ginger, and Burmese masala, similar to an Indian masala powder.
The Burmese pork curry simmered over the fire until it reached the fall apart tender stage. It was outrageously tasty, packed with garlic, fresh slices of ginger, a tartness from tamarind and sweet.
Without a doubt, this was the best Gaeng Hang Lay (แกงฮังเล) I’ve ever had anywhere in Thailand - and I’ve had it many places. The balance of flavors, and sweet and sourness, was delicious. It was a Shan / Thai Yai meal experience in Mae Hong Son to never forget.

This guy has the most infectious smile I’ve ever known, I’ve only just found his videos lately, and he has cheered me up after such a long illness, i can’t wait to get back in my kitchen to cook for my family again. I Did used to travel with my husband and family but after covt it has put a stop to that now I’m very content thankful I survived after critical care for a long while, I’m still hear and after watching Mark and after watching him just once I was hooked, Thank you so much, you talk about others having a great personality and smile and are friendly people, I have to say it’s you who has this wonderful personality and smile even at five o clock in the morning, you have such a wonderful personality to keep folks like me well entertained. To have someone like Mark to watch and listen to all the time has speeded up my recovery I’m certain. Just to mention I’m 66 years old and have eight grandchildren who used to come all the time to be fed at my home and they to used to bake, I’ve missed that so much, they are all willing to try new recipes and I can’t wait for them to try what Mark has been tasting and trying, I will copy anything. I’ve never previously had any desire to go to Thailand due to what you see in the media. I’m not a fan of what you see in terms of the tourism side of Thailand, but there is obviously a lot more to the country that you don’t see in brochures. Thank you Mark for highlighting areas that according to travel agents may not appeal to people. You’ve well and truely busted that myth for me, and once this COVID is under control, I’d like to visit and gain about 40kg from eating all day!

Almost ten years ago I learned how to prepare gaeng hung lay in Mae Hong Son province and I still cook it regularly to this day. I actually cooked up a batch last Sunday😀This is pretty much the way I learned to do it, except my version utilizes pickled garlic, some of its brining liquid, galangal and lemongrass in the paste, and omits the potatoes.

I so love you and your videos Mark. I normally spend 6 months of year in Thailand, but obviously that hasnt happened for a while. But youre helping me get through having to stay home. I really look forward to eating dinner with you every night. My simple food tastes so much better as i see you diving into all that yummy food. I ususally just eat steamed veggies and some fish or chicken and rice. But last night I got all inspired by watching you eat and made a Thai fish curry. Finished that off tonight. Thankyou so much. We cooked this kind of food in Jamaica also. We called it stewed pork adding in potatoes and carrots. Some of the seasoning are different and we eat it with rice.

In Burmese words, we call this method of cooking as 'Lone Chet'. Meaning we mix everything 'Lone' and cook 'Chet' straight in instead of frying herbs and spices first for fragrance more traditionally. In villages of central Burma and Shan States, they use pots much larger or in some rich villages use an old small boat to cook in. In order to use a boat as a cooking pot, they first coat it generously with mud and let it dry for a few days. Rice is also cook in a boat-pot. Traditional way of cooking rice in Burma is to pour out the boiling water half way when the rice is starting to cook through in the center and call that method 'Yay Nhge Chet'. 'Yay' means Water, 'Nghe' means tipping the pot to a side to pour the water out and 'Chet' means cooking. When a boat size pot is tipped to a side to pour out all the water, water flows out like a river. We call it poetically as "Htamin Yay Chong See". Htamin means cooked rice, 'Yay' is Water, 'Chong' is a creek, and 'See' is flowing. So, it's like "Water from cooked rice is flowing like a creek" which means the cooking is really big and generous, celebrating event is a big one, the village or a person sponsoring the event is very prosperous or rich. Most of the events cooking like that are charity events sponsored by someone or by a village that provide free food to the whole village, nearby village and mostly dedicate to local village monastery. A poetic line "Htamin yay chong see, mong tee ywe tha" meaning "Playing music when a creek of cooked rice water is flowing" describing a moment when food is ready to serve and party mood is on. You can see 'Chong see' rhyme with 'Mong tee'. 'Mong' is a circular shaped brass instrument that you strike (tee) with a stick to make a musical sound. 'Mong Tee' can also means 'announcing', too. In ancient Burma, 'Mong' is used as an announcing tool to announce arrival of royals or dignitaries such as revered monks.

Mark Wiens videos are the best. I learn so much and am inspired to travel (as soon as we can, lol). I remember asking my soon to be mother-in-law if she could teach me my favourite Indian curry dish in a smaller 4 person portion :) EVERYONE in the family just laughed. Mom does not measure, nor does she make a portion size for less than 10-12 lol It's always meant to be eaten by a family, not just the folks we live with.

@@connielikens3415 Also try Ohne Kaukswe ... it's known as Burmese Laksa except it doesn't have lime juice or palm sugar. Burmese food is so tasty and is not spicy like Indian. It is very creative too, with lots of side dishes and bits and pieces you add in at the end. Burmese food is a lot of fun. Especially a vegetable dish called Lethoke. A burmese mixed salad of cooked and non cooked ingredients. Man I'm getting hungry now. :D
