As a country boy, now elder at 79, I feel every heavy lift, smell the trees and cattle, taste the cool mountain water and want to spread Irish butter on a torn off piece of your bread. You sir are living my youth in the Appalachian mountains of southern Ohio. Stay safe and healthy!

His camera work feels almost professional. Like I'm watching a tv documentary. I thought he had multiple cameras until I went back to the beginning to watch, and he stated in a Q&A that he has a tripod and a drone. Excellent camera work.

Impressive work, Martijn! Concrete mixer running off-grid, in the mountains, priceless. I have to tell you, though, that encasing wood in concrete is not a good practice. The proper way would be to top your wall with reinforced concrete, directly on top of your stacked stone wall, (wash it for better bond) and embed some threaded steel anchors to hold the wooden plate/beam. Wood should be separated from concrete with some bituminous or similar membrane. The reason is that concrete always attracts moisture and wood rots if exposed to it. I agree. Concrete does not work without inserted steel reinforcement, concrete absorbs the pressure, steel the tension. Concrete without reinforcement cracks and crumbles under load. Please consult a professional, Martijn.

Yes, but that is not enough. I also mean the thin sheathing of the wooden beam.

Indeed, he is replacing a 200 year old roof and now the new one will need replacement in 20 years. You cannot encase wood in concrete or mortar. All this work will be for nothing at all. It would have been better to leave the old beams and just support them from below. His skill set is not up to this project

@@RRaucina Disagree, Martijn is quite skilled actually and admitted it was his first concrete work. The thin concrete around the beam will crack because of wood contraction due to its seasonal moisture change and the most contact with concrete will be with the layer the wood is resting on. Since the concrete sits on top of the stone wall, it won't wick water, like a foundation wall would, so the wood should be ok, not ideal but likely ok. I hope Martijn does not make the same mistake with the other wall...

The videos where you are moving from project to project throughout your day, taking time to explain the process, are so very enjoyable and inspirational. Your roof, rising out of the scaffolding, puts me in mind of a surgeon with a drape around his surgical site 😄. I know you'll figure out the concrete mixture and do well with it, just as you do with each challenge you face. Thank you "so much" for all the effort you put into making these beautiful videos. Thank you for sharing the making of bread. It is a relaxing break from work on the roof. I am not a bricklayer but when I had one renovating parts of my house, he taught me to mix cement, water and sand building which is not a normal sand, best coming from river banks coarse grained sand. The sand building is obtained from the ground materials of previous demolished constructions and, as for I saw, the cement is not in larger quantity to water and sand and the mix, in the usage it was made worked it out great. Hi Martijn! I am a visual artist and work a lot with cement. The secret is in the aggregate (sand, terracotta, or other). This influences the dry form and its rigidity. There are mixtures suitable for dry stone! I usually make 3 bags of sand (5 kg) for a 25 kg bag of intermediate sand. More cement than sand will break easily because it has no structure. It is important to use thin metal rods to give structure. Don't forget that this area has some synthetic activity and cement is not very flexible.

My other concern would be the risk of sudden wild fires. These are breaking out in several parts of Europe where there has been little rainfall for months. Here in Britain the month just gone was the driest July since 1935.

I also add a few teaspoons of water inside the Dutch oven - between the cast iron and the parchment - to create some steam before putting on the lid. 😁

Hi, you have a beautiful place. I think I know the solution for your bread problem. Your fire is too close. I think you need a bread/pizza oven. The kind made out of clay. The way they are constructed allows the heat to cook your bread perfectly. It's the same idea you're currently trying just in a different position.

Martijn, are you going to recycle the old beams and rafters from the roof? I had a fantasy of milling them into very long planks for horizontal panelling. Don't know if they're too rotten for that. Anyway, wonderful to see you at it again after last week's incredible barn raising.

I stumbled upon your videos and love watching them. I’m half Italian and Austrian. As soon as I saw the Italian alps I was hooked. I’m so impressed with your dedication and hard work. You are amazing. Your knowledge and talent for construction is fantastic. I was fortunate to spend a lot of time growing up in the Austrian alps as a child. Such beauty everywhere. Was always my biggest dream to live in the Alps and country. Unfortunately my life led me in a different direction. I live in Las Vegas Nevada. Hahaha. Nothing but desert, cactuses and lots of sand. It has its own beauty but I miss seeing mountains, forests, lakes, trees etc… Watching your videos takes me away to a place in my heart. So happy to have stumbled on your videos. Your bread making skills brings back so many wonderful memories of me watching my Oma in Linz Austria in her tiny kitchen always making bread. Yum..👋😃👍

@@judyschepp8748 Hello. Long story how I landed on the moon, I mean landed in Nevada. Haha Short story….. My parents moved to USA when I was 15. At 18 years old I was married, then later divorced living in Washington State. My only son got married and moved here. My sister and mom lived in Southern California. I didn’t like not having family close by and living alone. My son made me a grandma of a beautiful granddaughter so I moved here to be closer to them. Wisconsin is beautiful. I believe Martijn is making sour dough. 👋😁😁❤️

I'm always awed by the myriad colors of green trees and white snow. My husband who was in the Air Force was stationed in Texas. Wished there were more. I lived in Fairbanks Alaska . Started kindergarten and first grade there. Long time ago. As a kid I loved it. Had a beautiful Siberian Husky named Yukon. Nice memories. I live my life vicariously through your videos. I loved the idea of living as you do when I was a young person. I still do but age and some health issues prevent me from doing so along with a husband who is wonderful but has neither the desire nor the will to do this anymore. I might mention he is several years older than I am and we both enjoy the creature comforts to much! I’m glad you are doing this while you are young. You are setting a precedent for your life. When I mount wood against stone or concrete I use isolation material between. Normally soft material used for roof. Kind of pitch or tar mixture with very small stones covered some kind of blanket. Stone has always humidity.

Great job. I think it is ok to work your cement thicker when used against wood, only because the less water to seep into the wood. If the wood is not treated you can alwyas scorch it first.

That cap you poured on your wall needs to structurally tie into the wall. If u don't the weight of that roof could push that beam and concrete. Especially with extreme temperature changes. Your doing great things hate to see anything happen on this important part.

You are a hard working man! I didnt see you secure your concrete beam to the wall? I would drill some holes through the concrete down in to the stones in the wall and put rebar to keep that concrete beam from sliding off the top of your wall over time. The rafters once attached will hold it in place for a while but that is a lot of weight to be adding to your roof structure.

Martin, I love watching your videos. You are so proficient in everything you do, it's a pleasure and of course the scenery is magnificent. The weather is the same as here in TN. USA raining 3 or 4 times a week cooling down for a little bit then 90+ degrees with sweltering humidity. Thank you so much for sharing the good life.

Felt I was tasting that fabulous bread all the way through….ah, thank you Martijn! The mixing of dough or cement…always have to ‘feel it’ by hand for proper proportions….it is such a skill for both depending on conditions. Love that sound of the rain!

Another great video! Helpful hint: when you knead bread dough it helps to flour the board and your hands a bit to keep it from sticking. You also want to keep folding it as you knead.

I enjoy watching the bread making process. I have some that I make, just by eye, not a precise recipe. The moisture in the air makes a difference too. I wonder if you’ve had any issues with the altitude, but seems like you always have a nice loaf. The fire cooking method is intriguing, I’d miss my oven too much, I think. I also enjoy seeing how you set up your workspaces, lots of detail and thought behind it, yet easily modified with new knowledge. Tremendous video, as always, thank you!

Good looking bread! A finer crumb can be had by adding a dough tenderizer such as butter, olive oil or milk. Also, we just built a house. I remember the day the concrete foundation was poured, our very skilled builder remarked he was so happy it went well because pouring concrete is stressful. And this came from a builder with 25 years of experience.

Watching you make your bread is both fascinating and a little funny. My mother would not have let me knead the dough the way you do it. There was a set pattern for kneading the dough. I would suggest you create a rack to sit just above the bottom of your pot it would help to keep the bottom of your loaf from getting so dark Or try putting corn meal on the base of your dough. I always get hungry for fresh bread when your making it.

yes, I think he still needs to learn some in terms of his bread baking. my grandmother taught me to add a bit more flour so that it isn't sloppy and sticky like that, and to knead it for at least 10 minutes prior to leaving it to rise in order to develop the gluten so that it has the structure it needs to rise. If that's done correctly, it shouldn't stick to the bowl when it's turned out to be punched down and formed into a loaf to proof before baking. I think the lack of proper kneading and gluten development is why the loaf looks like it's coming out a little flat. Also, slopping a sticky dough around with one hand isn't kneading. Both hands should be involved, and you should almost be working up a sweat. Oh well. He'll learn, and I do admire his determination to learn so many things on his own. 🤷😉

In this episode Martin used a type 2 flour, which is what professional bakers in the United States would call a high extraction flour. It's halfway between a white flour and whole grain. Breads made with type 2 flour are going to be denser and flatter, just as Martin's loaf turned out in episode 31. I agree, however, that he should knead the dough more to build the gluten structure. Martin, you should also stretch your dough when you are folding it. That will also help build the gluten. I disagree that he needs to add more flour to make the loaf less sticky. A higher hydration dough has a better opportunity for oven spring and a nice, light loaf with a lot of volume. He should simply flower his hands and working surface to prevent the dough from sticking. My suggestion to Martin is to mix his dough in two phases. The first phase would incorporate about 2/3 the water with half the flour and the sour culture. Mix that into a sponge and let it ferment for a few hours. Next, add the remaining flour, water, and the salt. This is going to give you the best flavor and the greatest potential for a loaf with good volume. Martin, I know you've said that you like to develop what my grandmother used to call the baker's hand, and not measure the ingredients as you add them to your mixing bowl. However, if you want consistent results, you're going to have to measure. Preferably, you'd have a small scale or balance. You particularly need to measure your salt relative to the flour weight. The salt affects both the gluten and the yeast activity. It's a crap shoot every time you just take a handful and throw it in your mix. I make my living baking bread, by the way, in conditions that other professional bakers would consider primitive. Not as primitive as yours. :-) Good luck and good baking.

He’s pretty much creating a no knead bread. That has to be quite wet to get enough lift in a Dutch oven. Cooking on an open fire is almost impossible to avoid the bottom getting dark. It’s a rustic loaf. Warts and all.

Great job, very interesting to see how things change But I want to draw attention to one point - wood doesn't mix well with concrete the tree becomes damp from the water, and the concrete loses water and stops gaining strength, if there is such a need, then it is worth isolating the tree with something

I really have no words. I can read your actions. You love your life. I actually am trying to fix cellar rock walls in South Dakota. I too am learning to work with concrete. I liked your idea of forgetting the pile of loose rocks on top and replacing them with cement. I was even thinking of bricks. It is a process of thinking that often brings success, after several tries.

Embedding non-pressure treated wood into concrete seems like a bad idea. Especially if the concrete wraps around the bulk of the post. Since concrete is water permeable, the wood will either swell up and crack the concrete or straight up rot away
