What grains would you recommend for grains that taste good and gluton free? TY in advance. Priority for me is taste. I will grind my own as you recommend and store it. :)

We are on the 4th generation of storing flour with bay leaves. We have never gotten any bugs in our flour. I also freeze my flour (ground from the store) for 72 hours. It has always worked wonderfully. Happy cooking and baking, Debbie

What’s really wonderful about grinding your grain just before you use it is that it has ALL of the nutrients still in it. The nutrients degrade RAPIDLY after grinding, losing over 90% within two days.

Hi Mary! I’m only halfway through your video, but I figure if I don’t make the comment now, I’ll forget to do it. So about your friend with a more modern Vitamix. These units have a setting on them for making ice cream and smoothies. It’s a cold setting, so while your friend can always continue to freeze the grain that she is about to grind, that cold setting should prevent any heat buildup whatsoever in the dry chamber. You’re right about the grind. I have not ever taken a sieve and tested the grind of the flower, but it’s powdery and silky, very fine if you ride it for a A minute to three minutes, depending on the ground you want. Interestingly, the inexpensive black and decker unit that I have from Canadian tire from several years ago, also does a really nice job. What I like about that one is that it has a glass receptacle for the food. You can’t scratch those up. That’s the only thing I don’t like about the Vitamix is that if I put a harder grain or even dried beans in the dry receptacle, it’s gonna end up with all sorts of scratches in it. I hope this helps.

Hi Mary! Thank you so much for this detailed video...SO helpful!! I want to mention, I saw a video of a person demonstrating the efficacy of the seal of a gamma lid on a food grade, 5 gallon bucket purchased from Menards (a large, midwest home improvement store chain). He put a gallon of water in the bucket, tightened the gamma lid on it, then turned the bucket upside down. The water leaked out quickly. My husband checked the same brand buckets & lids that we also purchased from Menards...they leaked, as well! Not too airtight!! I would caution everyone to check the buckets and lids they purchase, before using for long term food storage. Hope this helps!

you can mill the flour a second time to produce a finer flour. As for the sieves, a usb powered vibration block held against the side of the sieve will make sifting much easier. With regards to historical flour separation, it was called, "bolting the flour" and it involved using various weaves of linen attached to a wooden frame and passing the flour through the linen. This still works, as long as you keep the linen in a low humidity environment and shake them free of residual flour on a regular basis.

I know this video is two years old, but I thought I would say that you can sometimes buy these pieces of equipment reconditioned from the manufacturer for about half price. I got my Nutrimill, Vitamix, and Kitchen Aid mixer this way. They all looked brand new and work great!

MS. Mary I just came across this video. I'm so glad i did too. My husband bought me a flour mill. So now I'm needed to learn about milling whole grain and mixing them as well as how to make flour for bread, pancakes or waffles, cakes etc. Sounds like all I have to do is sift and remove the germ. Hi Brenda, So happy to hear that you’ll be grinding your own grain. Yes, all you have to do is sift out the bran and the germ to make all-purpose or bread flour (depends on what grain your grinding). Then you can save what you sift out to use to make bran muffins or add to oatmeal, etc. for more fiber. But don’t forget to soak as it is the bran that contains a lot of the phytic acid. Love, Mary

Thankyou, I have been confused about which grain to use for white bread flour. I purchase my grain from a farmer here in France and in France they use a different grading then in the UK. So you have explained a easier way of how the grading works and now I understand how it works. Also, I purchased a Mockmill 100 and I really love it...

Thanks for sharing. I store most regularly accessed grains in half gallon Mason jars. The kids though rusted on some. Only rice I store in a square bucket with a snap on lid. We go through it quickly. We missed getting Daniel's school picture taken as we were unable to locate the entrance to the gym. All the doors we tried were locked. The first time we went the wrong way and were blocked by gates. We had to turn around and walk around the entire length of the school and back to the back on the other side. The last door which I didn't try the room was set up like a cafeteria so I didn't think it was the gym. The whole time it was raining hard so we were soaking wet. We did pick up his school meal delivery and I ordered some things for Dad and showed him how to check his email on his cell phone which he can only do here since he doesn't have internet access or cell phone signal on his house. I also addressed Christmas cards for you and my pen pal. When I did yours though accidentally wrote it upside down on the envelope. Will mail them Monday since it usually needs more postage. I was sleep deprived and exhausted from all the walking. Cardio is rough with exercise induced breathing problems. In my case my large bust doesn't allow my lungs to fully expand. I know since my breathing improved somewhat after a breast reduction but not completely since they are still proportionately too large. My airways are usually open.

The Aluminum trash barrels with a lid are great mouse proof options. That's how I would store my chicken feed but is good for human food too.

My mill is for a KitchenAid Standmixer. I bought it from a company, that went under because of the Covid. A few years before they did...Goldaskitchen. It was in Mississauga, Ontario, but shipped worldwide. I found their online catalogue really great, as going there wasn't an option for me. Was glad I got a few things from them before they went under. They sold most of their stock to places like McCall's.

Mary, I have enjoyed having whole grains in my kitchen pantry for over 25 years now. I still use the same electric Whisper Mill or manual Family grain mill. The manual FGM is great for cracked grain cereals, cream of wheat style breakfast cereals and more. I do use a variety of grains, to include corn. I prefer the flavor of cornmeal when I mill popcorn instead of the regular dried corn kernels. Even with all of my experience, this video offered me greater knowledge concerning sifting flour to seperate the bran. Thank you!

Matthew, that's exciting. I wish you success. It's something on my list too. Have you looked into "naked oats"? They are an, alas somewhat difficult to find, variety that don't have an outer husk, or the husk comes off easily - I've seen both mentioned, so maybe there are a couple of different varieties. This is easier for home growers, as regular whole, viable oats have a tough husk that is very difficult to remove. The downside is that they are a bit more fragile and more susceptible to mildew when growing. Another plus is that you can sprout them. There is also a naked barley. Regular barley has the same problems for home growers as oats. And the normal pearl barley and oat groats you buy at the wholefood shop are not viable, as the husk is mechanically removed which damages the germ. One other amazing seed I just discovered is camelina. It is very similar to chia; tiny, high in omega 3 and protein and has a nice nutty taste. When wetted it also produces a mucilaginous coating. It is an ancient seed grown here in the UK again. It has an orage colour.

@@MatthewSherriff85 yeah, the hull less varieties are hard to find. I only recently managed to find some here in the UK. First discovered them in a German wholefood shop, where they are more popular. Rice! Would never have associated it with Australia. But then again, would never have associated rice with France, but my most favourite rice ever is grown there - Carmague red rice. Lovely nutty flavour with a chewy texture. Definitely won't attempt to grow it here in Wales though. Are you a farmer growing these grains/seeds at scale or for your own use only?

I have seen the Vitamix dry canisters for $99. Vitamix sends out sales notifications also. The reason they recommend a separate canister beside just the blade, is that, over time and lots of grinding, the grains will scratch the container and some don’t like that. At one point, you could just buy the dry blade and fit it to the cannister. I am thinking of getting the stainless cannister. My Vitamix is 20 years old and it is my most used appliance. I even pack it and take it with us camping!

I have the Mockmill attachment for my Kitchenaid stand mixer that works great and the grain mill attachment for the mixer as well. Also, I have the Country Living Grain Mill and the old cabinet style Magic Mill. I have all grounds covered. lol

Can one just use a blender? I have a 14 speed Osterizer Blender which has a grind setting (3rd fastest spin of the blades). Also I have been sort of growing my own Winter Wheat each year. Started with 1 head of wheat picked from a field and just keep replanting seeds every Autumn. This coming Spring, I should have a decent harvest as half my garden is planted with the Winter Wheat.

Dan G, that is lovely, starting with 1 head of wheat and replanting. Just like Robinson Crusoe did - I think he found a few kernels. That was based on a true story, supposedly. Very inspiring.

@@janiceseigler6317 I'm in the northeastern part of Pennsylvania. I don't know what kind of Winter Wheat it is, as I had stopped and only picked 1 head from a plant in a field. Been replanting the seeds every year since, so this coming Spring I ought to have a good harvest of the Wheat. But if I grind it all, I won't have seed to plant in the fall again.

I have some wheat berries, from Bobs Mill, maybe planting in the spring, a small handfull. But on reading about wheats, they say that wheat robs all nutrients from soils. Could be why they had the problem out west, wheat takes everything, then erosion happens...but only a handful at a time, then you have to do all the things to make it possible to grind. Could be more trouble than just to get the berries, however will give it a try.

Can you seal grain in mylar bags or vacuum seal the grain first, and then freeze it?? I do not have a large freezer to do big bags before packaging.

If you have a Blendtec with a Wildside Jar you can grind your wheat in it in 50 seconds.

Some day I will get me some of those nifty buckets and a grain mill. Until then I buy 12 pound bags non gmo flour, storing them in totes. Not the best, but it will have to suffice.

That is a great option for now. As to the buckets - yes, they are great but start slow. I would buy mine little by little. And years back they were readily available at Wal-Mart and quite reasonable. This year changed everything! But I think at some point, things will go back to normal. Love, Mary

Hi Mary, I have enjoyed you talking about the Mockmill in this and other videos. The Mockmill says it can grind whole grains and field corn but not popcorn. Isn't field corn dried essential popcorn? I am interested in grinding my own cornmeal and looking at the Mockmill 100. What corn would I use? Thank you.

Hi Mary What model number is your Vitamix? I might NEED to look for one of the older ones! I saw that they even sold the containers with dispensing spigots! It looks like a model either 1000 or 4000. I love it that Vitamix does repairs and is US made!

Hi Katy, My Vitamix was made about circa 1990 at the Vitamix factory in Ohio. I’m not sure if the modern day ones are made in the US anymore. Yes, mine came with all sorts of accessories including the second container with the spigot. Mine is the “Maxi-4000” and also has the word “Commercial” on it. It’s been so long now so I can’t remember exactly, but mine may have been a refurbished commercial model. But I think any Vitamix you buy from that era is going to be a workhorse and last you for another 30 years! Love, Mary

Mary, what are your thoughts on me putting my grain in a sealed 5 gallon bucket, then setting it outside in below freezing weather for a week or 2 then placing it in my storage area which is around 40 degrees. Do I need to make sure grain is dry in the bucket. Ugh, I always overthink things.....

Sometimes one can find the Vitamix containers on ebay. I sold one on there when my new cabinets were installed because the 64 ounce container would not fit installed and switched to a 48 ounce container. There is a dry mix container on eBay right now with one bid for $38 plus shipping.

Hi Rebecca, I understand completely. Our grocery store switched to overhead bins that have a pull down lever to dispense the amount you want. It’s all very sanitary. Hopefully, your stores will install something similar. Love, Mary

Do you grind your own corn meal,too. If you do where do you get your corn and what kind of corn? We always used plain field corn like is taken to the mill to grind for animal feed. Or garden corn that was left to get dry and hard.

Do you store your sprouted grain the same way you store non-sprouted wheat berries? Does it last as long? I just got my grain mill and I've soaked , sprouted and dried my grain. I'm just wondering about how to store prior to grinding it.

Great question! The process of sprouting grains makes them less susceptible to rancidity. Therefore, in a sense, sprouted grains store very well and to a certain extent even better than un-sprouted grains. But you still want to store them the same way whole grains are best stored - in an airtight container or mylar bag with oxygen absorbers in a cool, dark place. Stored appropriately, whole grains - sprouted or not - will stay fresh for many years. One special note - if you decided to store your sprouted grains in mylar bags, it is especially important that you need to make sure that they are completely dry to prevent the development of botulism. And of course, no matter what way you store them - in a bucket for example - they should be completely dry to prevent the development of mold. Hope this helps. Let me know if you need more info. What grains would you recommend for grains that taste good and gluton free? TY in advance. Priority for me is taste. I will grind my own as you recommend and store it. :)

I bought hard white berries. I’ve never milled before yet . I’m trying to get up my nerve to make a loaf of bread. I just got my electric sifter delivered. A lot of bloggers give us the video using the Bosch blender saying if you don’t have that don’t use the kitchen aid because it’s too much. So that leaves hand. I don’t have the strength to do all this by hand. 9 to 10 or more cups of flour is a lot to handle. One vlogger uses 9 to 9 1/2 cups of the milled flour and another 6 cups of all purpose flour. They are not talking to us who don’t have a house full of kids to cook for. So I’m looking for a down to earth vlogger that make a smaller amount of loaves.

Great question. Yes, however, if there is a lot of air in the bag and you plan to store them for the long haul, you might want to transfer the grain to a Mylar bag or an airtight storage bucket. Love, Mary
