- 100g Biscuits
(ビスケット)
- 40g Melted butter

- Mold size 16cm

- Refrigerate for 20 minutes
(冷蔵庫で20分)
Matcha Creamcheese:
- 5g Gelatin
(ゼラチンパウダー)
- 25ml Water
(水)
- Wait for 15 minutes
(15分待つ)
- 200g Creamcheese
(クリームチーズ)
- 100g Yogurt
(ヨーグルト)
- 65g Sugar
(グラニュー糖)
- Hot water
(お湯)
- 200g Whipping cream
(生クリーム)
- Freeze 20 minutes
(冷凍 20分)
- 7g Matcha
(抹茶)
- 20ml Hot milk
(ホット牛乳)
- Refrigerate for 3 hours
(冷蔵庫で3時間)

I just made this and it turned out great ! ! ! For anyone else making this I have some advise so it will be easier for when you do 1. When adding the yoghurt and sugar use a whisk to get rid of lumps 2. when mixing matcha with milk make sure the matcha is COMPLETELY melted or you will have bits of matcha in your cake

I made this cheesecake last night and I absolutely love it! I used greek yoghurt and the mixture became a little clumpy but after a while of string i was able to smooth most of it out but it didn't affect the final cake too much. I cannot get enough of it, it's the perfect sweetness and ngl, I kinda ate the whole cake not even within 24 hours. Going to control myself so that I have some cake left when I watch the Footy grand finals tonight! Gonna be a challenge.

Procedure: Finely crush 100g of biscuits and then add 40g of melted butter. Mix well. Gently press it into the pan and then place into refrigerator. Soak 5g of gelatin with 25mL or water for 15min. For a firmer cheesecake use 6g. Plop 200g of room temperature cream cheese into a bowl and start mashing it. Once it’s soft add 100g of unsweetened yogurt. Then add 65g of sugar. Pour hot water into a bowl and place the smaller bowl with the gelatin into the bowl of hot water. Mix the gelatin until it melts and then add it to the cheesecake batter and mix. Pour 200g if whipping cream into a bowl. Whisk it until it is 70-80% fluffy, do not over whisk. Pour immediately into the batter after the husking. Use a spatula to fold it into the batter. Divide the batter into 2 equal parts, pouring the first half into the mold/pan. Spread evenly and put it back into fridge/freezer to set, 20 minutes. Next week 20mL of hot milk to 7g of matcha powder, mixing well, then set aside to cool. Once cooked, add it to the cheesecake batter from earlier. Fold it quickly and gently and do not mix it wildly. Take the set cheesecake out and add the matcha batter on top. Put the entire thing back into the fridge for 3-4 hours to set. To take the cake out use a wrung out hot towel to press the sides of it for 20-30 sec.

@@kathiemihindukulasuriya1538 Oh, I just followed the video step by step - made sure to have all the ingredients prior of course, haha. I just used an online metric to US converter, it seems to work just fine in my case. Here's also a little tip I've noticed while making this, btw: depending on how much you whip the whipping cream, your batter will either be more runny like traditional batter or, if you whip the cream for a little bit longer, it will be less pourable but more fluffy. I prefer the latter - while this makes it hard to make the cheesecake smooth looking, it makes the texture very fluffy, creamy and delicious. Of course it's up to you! My substituted chocolate top was admittedly kind of winged - I didn't have any prior measurements to go off of. What I did was heat milk in a pot, and add semi-sweet chocolate chips - kind of how you can make hot cocoa. I added enough chips and a bit of sugar and stirred until the consistency was a little thicker than hot cocoa. I poured what I deemed a good amount into the remaining batter (like he does in the video with the matcha milk instead) and mixed it in. This left the now-chocolate batter more runny, and I poured it onto the top of the cheesecake before putting it in the fridge to chill. The flavor was not as chocolatey as I expected, but it was kinda nice, having it not be so overpowering. Of course you can probably add more chocolate initially if you want a richer taste. Sorry I don't have exact measurements! One last thing, your best bet is an 8 inch cake ring mold. It's what he uses in the video (16 cm). Tell your daughter I said happy birthday! She's actually just a year younger than me :) And if you want, please let me know how it turns out!
