INGREDIENTS
3 pounds bone-in, skin-on chicken thighs and drumsticks
1 ½ pounds pork belly, cut into 1-inch cubes
3/4 cup soy sauce
3/4 cup vinegar
Water, as needed
3 dry bay leaves
1 teaspoon whole black peppercorns
10 garlic cloves, crushed
TKTK neutral oil
1-2 teaspoons sugar, optional
Calamansi, optional
GARLIC RICE INGREDIENTS
10 garlic cloves, minced
2 tablespoons neutral oil
2 cups day-old rice
Kosher salt
FOR SERVING
Spicy Filipino vinegar
Shrimp paste
COOKING METHOD
1. In a large ziplock bag, add chicken, pork belly, soy sauce, vinegar, and enough water to just cover the meat. Gently shake to combine and marinate for 6 hours, or overnight.
2. In a large Dutch oven over medium-high heat, add a touch of oil and marinated pork belly (reserve marinade). Cook until the fat from the pork renders and for the pork to begin to crisp.
3. Then add chicken and cook until chicken is golden brown on all sides. Add garlic and lightly brown, then add peppercorns, bay leaves, and reserved marinade.
4. Add more water if needed. Bring to a boil, then reduce to a simmer and cook for 30-45 minutes.
5. Taste and adjust with more vinegar, soy, and sugar (if desired). Continue cooking until the chicken is juicy and falling off the bone.
6. While the chicken is cooking, make the garlic rice. In a large, deep pan on medium heat, add oil and garlic. Cook until garlic is golden brown, then add rice. Cook for 3-4 minutes, stirring to incorporate garlic and oil into the rice.
7. Serve adobo with garlic rice, spicy vinegar, and shrimp paste.

Matty earned his Filipino card. That is legit chicken and pork adobo. In my home, we would also add some hard boiled eggs midway so the eggs will also absorb the flavors. Or put a fried egg on top for that extra flavor bomb.

No pork/chicken adobo is legit. as long as it has the main ingredients which is soy sauce and vinegar you can play with your preferred adobo

​@@Jonases_20wrong. adobo as a cooking method existed before the spanish colonized us, where salt and vinegar was used as flavoring and preservative for food. chinese brought in the soy sauce, and the spanish named it after their own dish. before calling your own countrymen illiterate at least check your facts first

One of the most, "THE MOST" simple and very basic Filipino Adobo. Very traditional and none of those fancy "schmancie" you will see from other KZbinrs who know nothing about cooking. Awesome job. Even the fried rice. You nailed it!!! You are now an honorary Filipino. 😃👍👍👍

Except that it looks salty, kelangan tlga lagyan ng konting tubig pag adobo.. a lil too much vinegar too, vinegar and soy sauce ratio shud not be equal

@@chidorinagashi4881 isnt vinegar the essential part of adobo? i know provinces cook adobo differently but my family says that the traditional way is to cook it 2:1 vinegar to soy sauce.

I've seen a bunch of 'Adobo' recipes on KZbin cooked by actual Filipinos who add a bunch of questionable side ingredients. Here we are with probably one of the most humble and authentic versions of this dish cooked by a Canadian madman who calls it "Adobe". What a video!

@@alice_agogo Silver Swan has become more and more bland and salty each day. Datu Puti is the better replacement. My mother was once a Silver Swan loyalist until Datu Puti came in the cooking cuisine picture.

Some ppl don't marinade at all because they want to cook quicker. Just saute garlic, fry meat a bit then add the rest. May not be as tasty as what Matt cooked but can do especially if you don't have time to wait for marination.

I'm surprised this is the first time Matty tasted Adobo. In his previous show from Vice, he went to Winnipeg and spent a day with a Filipino family and cooked up a feast. He was even made to eat Balut but failed. Good on you Matty! I hope you cover more Filipino dishes soon!

When I cook my adobo I add a little bit of sugar and I reduced the sauce some more to make the meat more flavorful..my kids looooves that version of adobo! 🥰🥰🥰

try this... make your recipe with chicken thighs. shred it. separate the sauce. then fry until crispy on some of the sauce. then serve it crispy with the sauce on the side.

I'm a Filipino and this is the correct way to do it. Other chefs try to make it fancy adding some bullshit ingredients but it's really just this simple though some Filipinos make it garlicky. Great job.

Sometimes, i find it funny when I see KZbinrs do FaceTime and keep forgetting that there’s a flip camera button. Cuz I don’t know about you, but my parents used to do this to me when they were trying to show me something and I literally don’t see what they were referring to. But that aside, your adobo is probably the most authentic way I’ve seen here in KZbin, and I would gladly eat it everyday!

Most delicious fried rice is the one cooked in the pan/wok where you cooked your adobo. Mixed the rice w/ the sauce left on the pan/wok.

Marinating is optional, adobo is something we cook in a jiffy, and garlic is commonly minced for garlic rice (sinangag)

I watched my gma make adobo all the time and finally tried my own. Such an easy and delicious dish, and the leftovers just get BETTER. I usually pair with some fresh sliced tomatoes drizzled with some sesame oil, bagoong(terong), patis and minced garlic. Last time I added a diced serrano into the braise for some heat and was not at all angry about it.

That’s darn good Adobo, Filipino way !!! This is the 1st time I saw someone eat it w Bagoong w it !! Some ppl think that Bagoong is only on Kare-Kare or for cooking Binagoongan dishes. That’s how my Dad eats Adobo - with Bagoong 😋😋. And I do too 😋😋 I taught my hubby (half Amer, half Fil) to eat Adobo w Bags n he loves it !! Now, he won’t eat Adobo w/o it !! Always hv a bottle or 2 in my pantry - same as Toyo, Suka n Patis, Banana Ketchup. Happy Cooking !!! Happy Filipino eating!!

With us Filipino usually meat are expensive so Adobo with big family of 7 or more, that kind of amount of ulam is not enough, so to make them more enough we add potatoes and boiled eggs and little bit of water so it will be enough, and also Adobo gets better the more time you reheated it because of the vinegar, like wine, but 👍 great job thats exactly the recipe. Simple but very enjoyable, its more exciting if more people eating it with you, place a banana leaves on a table, dump your whole pot of rice in the middle, portion your adobo to everyone, grab a bottle of coke, eat them with hand, no spoon, no fork, burn your hand with the heat of the rice, put your knee up next to your shoulder and enjoy eating filipino style.

When I married my 20 year old Filipina sweetheart I woke up the next morning and realized she didn't know how to cook American food. I thought I was going to starve the next few years. The first night she fixed me pork adobo. It was so good I wanted it the next night also. Never tasted anything quite like that before. By the end of the first month she had me eating most everything she cooked. There are still a few dishes that I prefer to skip, even after 49 years together now, but adobo is always welcome at any time. And any day that starts with garlic fried rice is going to be a great day. Our grandkids have learned to enjoy the food their Lola taught their parents when they were growing up. Another generation of those who love Pinoy food.

Im filipino, and just watching this makes me want to eat adobo right now. You sir just earned the FIlipino card. From all of the creators who tried to make Adobo. This is what it supposed to look like. THIS IS IT. Also, you can add hard boiled eggs when simmering. Trust me. Hard-boiled egg wont be the same anymore.
