There are restaurants in Japan that are dedicated to using every part of the chicken they can and i think it's a very cool concept

There is a really crazy story of how the Soviets copied Bologna, which is known as "doctors sausage" (yeah) and it was a massive hit because it was easy to produce en masse and initially actually quite healthy. KZbinr "My Name is Andong" made a really cool mini documentary about it, which I wholeheartedly recommend.
