Hello Jessica it depends on which Store Theme you are using...for my Shopify I have to create a Template, publish it, assign it in the Shopify Admin and I have options such as Brand Story, Product Landing, default Product, Pre-order and Gift Ticket

It works for all themes. You can customize templates for products, collections, pages, blogs, anything. It an amazing feature especially when used with meta fields.
