180 g protein
180 g sugar
180 g icing sugar
🥄 Prepare a Swiss meringue.
1. Mix protein, sugar and powdered sugar. Stir until smooth.
2. Put on a steam bath and hold, stirring, to dissolve the sugar.
3. Whisk until firm peaks.
4. Transfer to a pastry bag and use the Closed Star, Round, Saint-Honoré nozzles to plant the trees.
5. Sprinkle the Christmas trees with colored crumbs, coconut flakes or crushed nuts and send the meringue to dry in preheated to 90C for 1.5-2 hours.
